Butternut Squash & Turkey Chili ... from SRecipe.com

Overall: Very good chili, and a great way to get your veggies in without anyone knowing the wiser.

Cooking Suggestions: I microwave a large butternut squash, and pureed it with the chicken stock and tomatoes. This was the base. Now add your own variations of beans, corn, and meat (or no meat). I used ground beef, since that was all I had. Spice the chili like your family favorite, and you'll be suprised after you've let it simmer in your crock-pot for the day, and reheat the next. Your family won't know that there's squash in it.

Hint: There's a couple of Pumpkin Chili recipes on SRecipe.com. I made a similar before Christmas and my family enjoyed it.... it's the reason I tried the butternut version with confidence.

Crockpot Chicken Cordon Bleu....from SRecipe.com

It's soooooooo easy and good. Served it with rice, steamed broccoli, and cranberry sauce. All three of my kids inhaled it. (That's unusual in my house.)

Pumpkin Angel Food Cake -- It's good, and so appropriate for this time of year. Easiest recipe ever, and the kids and hubby ate over 1/2 of it tonight with a little fat free Cool Whip on it. Only 160 calories. Recipe is listed on SparksRecipes.com, but you can wing it. Simply add a can of pumpkin (not pumpkin pie mix), and 2T pumpkin pie spice to an angel food cake batter, cook in 9 x 13 pan for 35 minutes. It's Too Easy! And very good. Give it a try.

I am loving smoothies and it is a great way to get your fruit (and some calcium) in.

All I do is take a frozen banana (always have them because bananas go bad so fast nowadays!), some sort of berry (suppose you could use any fruit, but I like berries), a yogurt (usually use Yoplait fat free, but sometimes use Fiber one to get the fiber in too) and a dash of honey. Occasionally I throw a tiny bit of 1% milk in too if I don't want it so thick. Then I just blend in the blender until smooth and enjoy. It is a good summer treat. If you didn't want to drink them, you could also freeze it and make a frozen treat!

One of the things I always miss being in the south is fried chicken and I hate breaded chicken baked. I found that if you take a chicken breast on the bone, leave the skin on it, rub it with olive oil, and sprinkle salt, pepper, and poultry seasoning and cook it in the oven for about an hour at 350 the skin gets crispy (like a turkey) and the meat tastes like it's fried. You will know it's done when the skin is brown. I know this isn't the healthiest way to eat chicken but it beats running to KFC... You can also use your favorite herbs and seasonings.

Chicken with skin _ Olive oil and salt 290 cals 12 g fat 4 g saturated 38 g carbs and 100 mg sodium
