What a great challenge Ronda! Sounds like everyone had fun with it, even if they didn't get it all in, it's a great one to shoot for.

I try to go for the 5 fruits/veggies daily, so I'm sure I got that done (maybe not the rainbow part, that was last weekend, so who can say? but like many mentioned this is the time of year for it!) And we got out on the bikes on Sunday, so that was covered too.

Sounds like everyone did well! and had fun doing it too.

I did great on my rainbow Saturday, Sunday was a little harder but I did get my full rainbow.

Didn't go swimming Sat, but did Sun and I lifted weights.

SUNFLOWERGRRL, that cobbler sounds great! I'm going to make this. I don't have enough blueberries so I need to get more this week.

Well, I didn't get the full rainbow either day...but I did get at least 5 servings of fruit/veggies each day. It was fun trying...and since blueberries are in season, I had some pretty dishes.

The hiking - well Saturday was good, 4.4 miles in 2 hours...good for me. Sunday I took a much needed day off (too many chores, too much heat, not enough sleep). But, was back at it Monday. Ahhhh

I did really well on the fruit! ..the veggies not so much; but doing well on the veggies today! I did major 4 hrs gardening each day and I mean cutting down trees, pulling and yanking and digging humungous weeds - 9 1/2 bags worth. Whew. It felt great to do that much physical work for a change. Thanks for the great challenge. I look forward to the next one! emoticon

How I did? Did well on freggies. I stocked up on Friday and included freggies in my meals

I didn't do so well this weekend. I didn't go climbing cause it was far too hot, although I did get in a run early Sunday morning before it heated up too much.

I only managed 4 of the 6 colors of the rainbow, I wasn't able to get in any blue or orange, alas!

90 minute fast hike yesterday with friends. passed the sheep are that grazing on our local open space to eat noxious weeds.

made spaghetti with zuchini and yellow squash in the sauce (chopped fine in the cuisinart, kids were none the wiser) and made this wonderful (and healthy) peach and blueberry cobbler from Eating Well: eatingwell.com/recipes/search.php?id

Saturday was great! Ate a rainbow of veggies and went on a 2hr very fast paced hike!

Today was not great =/ but tomorrow is a new day.

i really like these weekend challenges.

I made it through the weekend challenge! kayaked and walked Saturday, hiked Sunday (not too far though because it was 90 degrees, and very humid)....Rainbow eating both days: red and yellow apples, tomatoes, green beans, carrots, salad that had purple cabbage, corn, blueberries ... all found their way to my plate this weekend! Also had stir fried skinless chicken Saturday and stir fried shrimp Sunday mixed with the above veggies... used olive oil for the stir fry.

This is a challenge I'm going to try to keep practicing in the weeks to come....


Just keep swimming!

Never give up!

Just got back from my hike, but the spot we wanted ... the road up was closed! That would be a 9 mile forest road that I didn't want to walk before getting to the hike. I am so bummed! Instead we found a hike about 10 miles away - 2.5 miles one way to a beautiful waterfall. It was nice, not as heavy duty as I planned so I might do a bike ride tonight. Rainbow eating is easy. From the garden -tomatoes, onions, basil, and parsley were added to last nights dinner. From the farmer's market salmon, watermelon,corn, sweet onions, and new potatoes - I'm still thinking about it and know I won't top it tonight - garden burgers and turkey burgers on the grill with all the veggies and fruit we didn't go through yesterday. The tomatoes have taken over in the garden, so I need to come up with more to use them with tonight!

I was in Vermont this weekend, so it was easy to do my thing outside. I went for a 90 minute walk around Lowell Lake. It was beautiful.

As for the rainbow eating, that was 'easy' too, since there are lots of Farmer's Markets in VT. We stopped at one, got some fresh picked corn, and some tomatoes. They were delicious!

a 40-minute hilly walk today and a long hike tomorrow with friends and DH. so far today i've had blueberries, grapes, salad, tomatoes, snap peas. hmmm, need some yellow and orange in there. thanks for posting such a fun challenge, Rondarc.

on sunday, my daughter has a fun day with her soccer team. that will keep me busy. there are a variety of activities for the children and the adults who come with them. i just picked up some fresh veggies and fruits in a rainbow of colours for me to enjoy this weekend.

I am going to TWO family reunions tomorrow, both places I have access to a pool so I will be in the water with my FIVE grandchildren (FOUR of whom are under age FOUR)! Imagine dozens of families bringing their garden produce to picnic tables lined end to end about TWENTY feet in length in TEN parallel rows. There will be all the colors of rainbow. I am so excited!

Nothing tastes as good as size 6 feels.

Well the outdoor activity is easy - I'm doing pre-dawn hikes both weekend days. Its gonna be hazy, hot and humid so I'll beat the sun and beat the heat.

The Rainbow will be more challenging...especially finding Purple Fruit/Veggies....but, I'm game to give it a go. I'll let ya know how I faired come Monday.

Tomorrow I'm waking up early and doing a 10 mile run, and tonight for supper I'm having a colorful salad; cucumber, tomato, red pepper, green pepper, yellow pepper, grated carrots. Yum :)

I'm in!

Our farmer's market with all of the wonderful local grower's fruits and veggies makes it impossible not to eat in rainbows!

I plan to do a nice long trail run. I'm scheduling myself for 18 miles, with up to 6 additional possible if I'm up for it. If my knee or ankle are not going for it, I'll only do 12.

SUPERMB - Could you be talking about Eagle Creek? One of my favorite places?

I hiked around mt. Hood last week at scout camp - before the clouds showed up- I am ready for the challenge - no problem eating the fruits and vegetables and have a 10k race tomorrow at Oaks park down on the Willamette river in Portland Oregon. Count me in!!!

Last weekend I hoped to hike Mt Hood, but with the cloudy weather, we postponed a hike that promises views of the Cascades to do a lovely waterfall hike. So - looks like a clear sunny day on Sunday and we're doing it - up the side of the mountain for some Glacier viewing (kids in tow - dogs at home due to terrain - and the fact that my Goldendoodle is a clutz and just about walked off a cliff last weekend - he is of course in a chest harness)

Swimming on Saturday and Running on Sunday. I also plan to go on two nice walks with my dog. We usually only go about 2.5 miles since he is a little guy.

5 a day will be no problem, but I will do my best to get the rainbow!

My reason for being indoors is that I have a hard time dealing with the heat and humidity. I have been here in Georgia for a long time, but still haven't gotten used to it. I know how that woman feels who says that she is going on a triathelon and swimming in her own sweat (lol)! emoticon

okay, i guess i'll start!
rainbow's great this time of year, since everything is ripening at once.
supposed to be very hot over weekend so am taking the challenge for early morning treck both sat and sunday- 3- 5mi. each day.
would do longer but have to be back when young daughter up and then will go off again at kid speed....

Sorry I'm getting this one out a little late so I'll try to make this an easier one.

Again, this is a two part challenge. The first is to eat a rainbow of fruit & veggies over the weekend, and if you don't have a rainbow in your house, eat at least 5 servings of fruit & veggies each day.

And second, name one outside activity you will be doing over the weekend. It looks like it's going to be a nice weekend all over so there is no reason to be indoors.

Let's hear what your activity is going to be and come back Monday and let us know if you did it and ate your rainbows!!
