When I was a kid one of my favorite Friday night dinners was giblet gravy over pancakes. My husband & I still make it once in a while and he makes a really nice snack out of the chicken liver, finely minced and sauted lightly with minced onion and garlic. We use every little bit we can.

Chicken can be prepared in more ways that can be counted. Yes, we had chicken every way possible when I had nine kids to feed. Not all mine. I became the chicken master. Oh! The memories.... All good...

That's awesome I could never do chicken cause of my hubby but I could do other staple like meat. When we had a little money for food we'd go to Aldi & just buy ground turkey & veggies & some tomatoes in a can & that's what we'd eat We also bought some cheese & startch but we didn't spend too much money.

great we had the same sunday meals as you,we also had chicken curry through the week or chicken gravy with mash,chicken salads and chicken and mushroom omellets.mom used to make up a chicken stew with the carcuss and once all the liquid had gone from the stew if there was any chicken and veg left she would make a chicken stew pie.how i loved the chicken stew pie,lol.happy memories.thanks for the remonder.

When I was a young single working mother and there was just my son and me. I always bought 2 chickens every week and on Sunday's I baked those chickens. And I made a pot of rice. After I took the meat of the chickens I took the bones and the necks and cut up veggies I boiled it and made a pot of stock. Then after it cooled I took the bones and necks out. On Sunday we had baked chicken, mashed potatoes and mixed vegetables for lunch. For supper that night I made chicken salad sandwiches with cut up apples and raisins and I took some of the stock and the rice and made a soup to go with the sandwiches. On Monday we had fried rice with chicken and vegetables. Tuesday was left over soup and pulled chicken sandwiches. Wednesday was chicken, rice and frozen vegetables and creamed celery soup made into a casserole. Thursday evening was chicken fajitas, and Spanish rice. Friday was always the last of the chicken & frozen mixed vegetables and the stock thickened to like a gravy.poured over the rice. Saturday was always are meat other than chicken day. I tried to keep everything under $40 each week. My son once said Mom no matter how hard we had it you always had a hot meal every night and we ate a lot of chicken back then LOL
