I had Hainanese Chicken (steamed chicken breast with ginger, garlic and spring onions - make sure you brine the chicken beforehand to keep it tender) + Cauliflower-Zucchini "Rice" and Sauteed Spinach with Garlic. Filling and healthy! :)
I loved it! The recipe does not call for enough liquid. No problem. We just added water.
I was looking for a lentil and barley soup, but found this and we had some leftover uncooked sweet potato, so I thought I would try it. It turned out to be one of the best soups I ever made!
(And to tell the truth, I forgot the curry. It was really good anyway. I could have added some at the last minute, but I decided to add a bit of grated cheese to my bowl instead. My husband had his plain and loved it that way.)
Last night I made my own version of 7 Layer Dip. I couldn't find the recipe so, I made my own.
black beans slightly mashed. Place in the bottom of a bowl. Avocado, mashed and put on top of the beans. Tomato, onion Sour cream Salsa. Lettuce.
Not sure about the order or if I should have done anything else, but it sure tasted good and was great today putting the left-over on chicken nachos for lunch.
