I had Hainanese Chicken (steamed chicken breast with ginger, garlic and spring onions - make sure you brine the chicken beforehand to keep it tender) + Cauliflower-Zucchini "Rice" and Sauteed Spinach with Garlic. Filling and healthy! :)

We had Kale Sweet Potato and Lentil Soup today.

I loved it! The recipe does not call for enough liquid. No problem. We just added water.

I was looking for a lentil and barley soup, but found this and we had some leftover uncooked sweet potato, so I thought I would try it. It turned out to be one of the best soups I ever made!

(And to tell the truth, I forgot the curry. It was really good anyway. I could have added some at the last minute, but I decided to add a bit of grated cheese to my bowl instead. My husband had his plain and loved it that way.)

PS - We had no kale, so I used spinach.

Thanks, for posting that "recipe."

Seven layer dip? That's a lot of layers!!

I've never had a layered dip. Interesting idea.

Last night I made my own version of 7 Layer Dip. I couldn't find the recipe so, I made my own.

black beans slightly mashed.
Place in the bottom of a bowl.
Avocado, mashed and put on top of the beans.
Tomato, onion
Sour cream
Salsa.
Lettuce.

Not sure about the order or if I should have done anything else, but it sure tasted good and was great today putting the left-over on chicken nachos for lunch.

Tried any new recipes lately?

I made Beets with Angel Hair Pasta this past week. It was good! I loved the sweetness of beets mixed with garlic.

OK, I cheated. I didn't have Angel Hair Pasta. I used plain spaghetti. It was still good.

(OK, I also left out the red pepper flakes. Personal preference.)
