combining ideas below, yogurt cucumbers and dill is delicious. garlic to tast can't hurt. start with a little.

You can make tzatziki -- Greek yogurt, minced or grated cucumbers and mint. Wonderful, healthy dip!

I like to slice them thin in a container, add vinegar, some water, dill weed and a little garlic salt. Yummy! They last along time and we use them for salad toppings, a side dish, or on sandwiches.

I love cold cucumbers and cold tomatoes together - either on a sandwich, or just chopped together in big chunks in a bowl, with just the smallest sprinkle of salt. So good!

2 ideas:

1) Thinly slice cukes & onions in a bowl, add white vinegar or rice vinegar & water & splenda to taste, let soak overnight in refrigerator!! Can last quite a while in the refrigerator & makes a cool crisp side dish!!

2) Cukes sliced thin on peanut butter sandwich instead of jelly!! I know it sounds weird, but it is cool & crisp & really tastes good!!!!

Sorry, can't really contribute on this on...although I like the crisp crunchy taste of cucumbers, they don't tend to agree with me, so I stay away. I do like to soak them in ice water and have a spa day with my 9yo daughter though.

We have a bumper crop of cucumbers this year.

I love Greek salad - tomatoes, cukes, onion, feta...

I can snack on raw cucumber. I can make pickles.

Any other suggestions for what I can do with them?
