This is not a recipe, but I thought I would share it anyway.

Here's a recipe for an easy, filling black bean soup, that won't break the bank. Add some brown rice (and cut the portion size down; stretch it to 6 servings instead of 4) and you have a quick, satisfying meal! I threw this together one day when I just didn't feel like cooking, and it's tasty, and easier than other black bean soup recipes I've tried.
Note: It is a little high on the sodium side though, so if you are on a low sodium diet, substitute low sodium versions of the the beans, can of soup, and salsa.
Easy Black Bean Soup
Ingredients: Bush's Best Refried Black Beans, 1 can Soup black bean Goya, 1 can Salsa, .75 cup Lemon juice, .2 tbsp Onions, raw, .5 cup, chopped Yellow Sweet Corn, Frozen, 1.5 cup kernels
Directions: Combine all ingredients in a medium pot, add half a can of water. Stir to combine, add some garlic powder, cumin, and cayenne pepper for a little heat. Simmer as long as desired.

I am going to post a link to Red Lentil with Pumpkin. We have proclaimed it a favorite. It is great this time of year. I made it again this week. We were running out of lentils so I made a substitution and cooked it longer, but it was not as good. However, we still like this and I will make more of it this winter.
1 Lb ground beef (lean) 1 Can green beans 1 Potato (small cubes) 1 Cup carrots 1 Can mushrooms Other veggies (add or subtract as desired) 1-2 cans Cream of Mushroom soup Small amount of water to make soup creamy. Pepper
Brown hamburger,drain (if necessary), combine with hamburger, veggies, soup, pepper. Mix together in covered dish. Bake at 350 45-60 min.
Delicious and very versatile. Reduce beef and add veggies to taste.
tip: I prefer the baby carrots, and I slice them even smaller. I haven't tried ground turkey, but it should work well.
