I do like omelettes! I tend to think of them as breakfast food, but they can certainly make a good quick supper.

Do you have any favorite recipes for when you come home and want to make something fast?

I have a couple.

One I make a lot in the summer is Greek Salad with Tomatoes and Cukes (and Feta cheese!)

Stir fries are good too!

Just cut up an onion, some ginger, and some garlic.
Fry them in some sesame oil.
Add other fresh veggies such as broccoli, thawed oriental veggies, mushrooms, corn, red peppers, what ever you have in hand. Even spinach or cabbage.
Add some cut up cooked meat if you have it.
Add a bit of soy sauce.

It 's good.
Serve it with rice noodles or pasta or rice or whatever you have.
