I loved this Cucumber Tomato Salad!

Note: I cut back a bit on both the water and vinegar. It's a marinade that you pour off, so depending on the type of bowl you use, you may not need 2 cups of water. I used 1 cup of water and 2 1/2 TB of vinegar.

I found it!

To edit a recipe you have to open the recipe box under "my Recipes" at the right hand end of the menu bar. Once there, everything is easy and straight forward. It's just finding the link to get there, that's a bit difficult.

Salads are always nice in the summer.

If you like beans, you might like this recipe:

Swiss Chard and Garbanzo Bean Stew

It is also high in sodium. (Like with the turkey chili, the sodium comes from canned beans.) It is tasty.

... and if you grow the swiss chard (like we do) it becomes especially economical.

Of course using dried beans instead of canned is better both for the pocketbook and for the sodium.

Hmm, I will have to try that sometime. It does sound like it could serve 6. That would cut the sodium some too. (Not that I have a problem with sodium, but that seems to be quite a high level in that recipe.)

I might add some celery and/or onions to it.

This challenge will run almost 2 weeks .

Our main challenge for next week is to find good recipes for summer suppers.
They must be both healthy and economical. Of course they should taste good too!

Spark Goodie Prizes will be offered for:

Week 1

Recipe Submission: Until July 24th - 3 prizes given at random from all submissions (although expensive recipes don't count.)

1 Submission with good use of veggies
1 Creative Fruit Submission
1 Main dish with non-meat protein
1 Main dish which makes good use of a smaller portion of meat or fish (2 oz. or less per person.)

Week 2

- Most popular or tasty dish
- Most popular meal plan for under $1 per person - must be a complete meal plan

3 random prizes for submission of comments, reviews, and nominations of recipes... and for voting!

Submit your vote by July 30th!
