stuffed kohlrabi.peel,scoop out the middle but keep it.dry fry a bit of ground meat,onion,mushrooms(optional)tomatoe puree add some water,seasoning chopped carrots the middle of the kholrabi´chopped small.cook for about 20-30 mins,put in the scooped ou kholrabi,a bit of shredded chees(optional)and bake in oven till kholrabi is soft.could also stuff with a savory rice filling for a vegaterian alternative.
kholrabi chips.peel,cut in chips wash,roll in olive oil and parmisan cheese then bake in ofen 20 mins enjoy alone or with a salsa sauce.
cut very thin after peeling and washing and eat raw,at halloween i cut the thin slices in ghost shapes the kids love it,
you can use it as an alternatve to any root veg reciepe.ie instead of turnip,swede or carrot .it is great in vegtable soup though you can make a very nice cream of kholrabi soup with curry or corriander.hope this helps.if you need anymore let me know.
