Roasted vegetables (zucchini, red peppers, carrots, mushrooms or whatever with a little olive oil, garlic and maybe Mrs. Dash Italian blend roasted at 425 for half an hour or so) with pasta. The veggies make the base for just a little pasta and sauce and are really lovely and filling.
They don't have to be budget meals either. We all need a treat now and then, and a favorite home cooked meal is probably a lot cheaper and healthier than eating out. (Which we may also still do from time to time.)
