Not really many in my omelet, but I'll be having a banana/protein powder/spinach/half-avocado smoothie for lunch and a southwestern chicken soup with lots of veggies for dinner, and some fruits for snacks.

I'm getting better! I made my mash for my parrots: edamame, black beans, rice, carrots, shredded spinach, broccoli, red bell pepper, and brown rice. And then I thought, this is what I should eat!

Yes! My husband makes great salads: spinach, lettuce, carrots, tomatoes, celery, peppers.
I had two cups and some Irish cheddar cheese for lunch today. Yummers! I'll probably have carrots and cauliflower with some light ranch dressing for a snack later. emoticon

Yes, my veggie and fruit shakes are getting the belly fat down. I stuff into the blender: spinach leaves, kale sprouts, an orange veggie and a red one, and one fruit. I mix in sweetners (oh no, sweetners are bad, I heard this on the news, but I still use a little), nondairy creamer for milk (avoiding lactose intolerance), nuts or beans, a little cinnamon, and sometimes peanut butter. These shakes take away food cravings, help make me feel full, and sustain me all day. I get about three 12 ounce glasses from each blender full of these veggis and a fruit.

Hawthorn berries are a type of apple, but without as much flavor and as small as a large berry. The tress are like dwarf apples in size. They are great protection against heart stress. Totally nontoxic, the berries are pureed and dried into fruit leather for children's treats in China, where they are abundant in wild growth.

Tomatoes tomatoes tomatoes -- FINALLY getting inundated with tomatoes...had a few here and there but I guess 'cause the summer here (unlike anywhere else in the US huh!) was unusually cool it took forever for the bulk of them to ripen...finally getting to just GORGE myself on them! I'm going to have to freeze some here in a week or so; did that last year with some that were in danger of spoiling, then unfroze 'em and made ketchup last fall; it was delicious. I do want to start canning; I was sorely tempted by a canning set at Target I saw on sale, but I'm just afraid I won't have the time and it'll just sit there making me feel guilty :)

Oh, and I heard blueberries are good for UTI's, too, as good as cranberries and not as SOUR! What are hawthorn berries like? I've never had them...

I'm all out of fruit! This is a catastrophe.

I had half a tomato with cottage cheese for breakfast, then made some sauteed tofu, spinach and the other half of the tomato before I went out for Sushi Happy Hour at 3pm (not a lot of veggies in sushi!).

I still need a couple of servings today. It may be time for some V-8.

I've been sneaking in a chopped carrot when I cook oatmeal just for one extra serving. I also chop up apples in mine and it adds a lot to the experience.

On Sundays I make myself a giant pot of vegetable soup. I sauté some garlic and onions in 1 tsp of olive oil and then throw over them any and all the fresh or frozen vegetables I have on hand (no potatoes or corn). I top it with a lot of broth (but water with salt would be fine too) and 1/4-1/2 can of crushed tomatoes. You can season with any spices, I use fresh parsley and some oregano. YUM! I eat this for lunch everyday during the week. I eat a huge bowl (3cups) and it is still a ridiculously low amount of calories and keep me full forever.
