Returning to a crock pot favorite today ...

Nutritional Info
Servings Per Recipe: 10
Amount Per Serving
Calories: 67.5
Total Fat: 3.0 g
Cholesterol: 0.0 mg
Sodium: 459.5 mg (use low sodium broth to reduce this number)
Total Carbs: 6.5 g
Dietary Fiber: 2.2 g
Protein: 1.6 g


Ingredients
1/4 tsp Cayenne Pepper
1/2 tsp Cumin
2 Tbl Seasame Oil
1 Tbl pressed Garlic
4 C Chicken Broth (Gluten Free)
9 C (1 Bag) Normandy Blend Vegetables (or substitute)
8 oz can Diced Tomatoes
1 Red Pepper

Directions
In Crockpot (or stock pot) add all ingredients and cook 30-40 min on high until done

Number of Servings: 10

Im not sure this is a favorite recipe yet -- But this morning I will be making:

emoticon Super Easy Cheesy Rolls
via Level Health and Nutrition

1 cup tapioca flour, plus extra for kneading
tsp cream of tartar
tsp baking soda
1 cup Great Value/GV mozzarella, finely grated
1 cup GV Italian blend, finely grated
3 large egg yolks
2 tablespoons coconut milk

It sounds like it will be a nice companion to the spaghetti (with rice noodles) that I will also be making! I will convert and include in recipe tracker if it becomes a fav!

Update: Not bad for cheesy rolls -- I made a few adjustments. Baking time was 19 minutes in my oven. I will update in recipe tracker soon

An example of a healthy Spark Recipe I make is:

Nutritional Info
Fat: 3.0g
Carbohydrates: 33.5g
Calories: 324.3
Protein: 39.8g

Ingredients
1 medium yellow onion, sliced
2 cloves garlic, minced
2 large carrots, diced
2 large sweet potatoes or yams, peeled & diced
15-oz. can chickpeas (garbanzo beans) drained & rinsed
2 lb. boneless, skinless chicken breasts, chopped in to 2'-3' pieces
1/2t. cumin
1/2t. turmeric
1/2t. cinnamon
1/2t. black pepper
14-1/2 oz. can chopped tomatoes

Directions
Combine the first six ingredients in a slow cooker. In a small bowl, mix together the spices. Sprinkle over the food in the slow cooker. Add the chopped tomatoes.

Cover and cook on high for 4 hours.

Makes 6 1-1/2c. servings.
