Eggplant Parmesan Recipe

Ingredients
2 lbs (about 2 large) eggplants
Kosher salt
1 28-oz can whole peeled tomatoes
1 clove garlic, peeled and minced
Olive oil
Freshly ground black pepper
1/2 cup all-purpose flour
1/2 cup fine dry breadcrumbs
4 large eggs, beaten
1 1/2 lbs of fresh mozzarella cheese, sliced into 1/4 inch rounds
1 cup grated high quality Parmesan cheese
1 packed cup fresh basil leaves
Method
1 Cut eggplants lengthwise into 1/4 inch slices. Arrange one layer in the bottom of a large colander and sprinkle evenly with salt. Repeat with remaining eggplant, salting, until all eggplant is in the colander. Weigh down the slices with a couple of plates and let drain for 2 hours. The purpose of this step is to have the eggplant release some of its moisture before cooking.

2 While the eggplant is draining, prepare tomato sauce. Combine tomatoes, garlic and 1/3 cup olive oil in a food processor. Season with salt and pepper to tasted and set aside.

3 When eggplant has drained, press down on it to remove excess water, wipe off the excess salt, and lay the slices out on paper towels to remove all the moisture. In a wide, shallow bowl, combine flour and breadcrumbs. Mix well. Pour beaten eggs into another wide shallow bowl. Place a large, deep skillet over medium heat, and pour in a a half inch of olive oil. When oil is shimmering, dredge the eggplant slices first in the flour mixture, then in the beaten egg. Working in batches, slide coated eggplant into hot oil and fry until golden brown on both sides, turning once. Drain on paper towels.

4 Preheat the oven to 350°F. In the bottom of a 10x15 inch glass baking dish, spread 1 cup of tomato sauce. Top with one third of the eggplant slices. Top eggplant with half of the mozzarella slices. Sprinkle with one third of the Parmesan and half of the basil leaves.

5 Make a second layer of eggplant slices, topped by 1 cup of sauce, remaining mozzarella, half the remaining Parmesan, and all of the remaining basil. Add remaining eggplant, and top with the remaining tomato sauce and Parmesan.

6 Bake until cheese has melted and the top is slightly brown, about 30 minutes. Allow to rest at room temperature for about 10 minutes before serving.

Serves 8.
I use low fat cheese and egg beaters to save calories.

CHOCOLATE BROWNIES

Ingredients
3 tablespoons unsalted butter
2 tablespoons canola or other neutral tasting oil
4 ounces semisweet chocolate, coarsely chopped
3/4 cup packed dark brown sugar
1/4 cup white sugar
2 teaspoons pure vanilla extract
1/2 teaspoon fine salt
2 large eggs, cold
1 tablespoon cold brewed coffee
1/4 cup cocoa powder
3/4 cup all-purpose flour
1/4 teaspoon baking soda
Directions
Position rack in the lower third of the oven and heat oven to 325 degrees F. Use an 8 by 8 silicon baking pan or line a similar sized metal or glass baking dish with foil or parchment paper so it hangs over the edges by about 1 inch. Spray the prepared pan completely.
Put the butter, oil and chocolate in a microwave-safe bowl, and heat at 75 percent power for 2 minutes. Stir, and microwave again until completely melted, about 2 minutes more. (Alternatively put the chocolate and butter in a heatproof bowl. Bring a saucepan filled with 1 inch or so of water to a very slow simmer; set the bowl over, not touching, the water, and stir occasionally until melted and smooth.)
Stir the brown and white sugars, vanilla and salt into the chocolate mixture with a wooden spoon. Add the eggs and coffee and beat vigorously until fully incorporated and the batter is thick and glossy. Add the cocoa, flour and baking soda and stir just until it disappears.
Pour the batter into the pan and bake until the top is crispy and a toothpick inserted into the middle comes out with a few crumbs, about 30 minutes (40 minutes if not using silicon).
Cool the brownies in the pan on the counter. Lift brownies out of the pan by the foil, if needed. Peel off the foil and cut into 2-inch squares. Serve. Store extra brownies in a tightly sealed container at room temperature for up to 3 days.

Low Fat Apple-Cranberry Breakfast Cookies

30 cookies

Ingredients
1/4 cup light butter
3/4 cup dark brown sugar
2 large eggs
1/2 cup unsweetened applesauce
1 1/2 cups wheat flour
1/2 teaspoon table salt
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1 1/2 cups uncooked old fashioned oats (or quick)
1/2 cup apple, chopped (or dried apples)
1/2 cup dried cranberries
1/2 cup chopped walnuts

Directions
1 Preheat oven to 350°F.
2 Combine butter and sugar in the bowl of an electric mixer; beat until light and fluffy, about 1 minute. Add eggs and beat for 30 seconds; add applesauce and beat just to mix.
3 In another bowl, stir together flour, salt, cinnamon and baking soda; add to mixer and beat to form batter. Mix in oats. Add apples, cranberries and walnuts; combine by hand.
4 Coat cookie sheet with cooking spray. Drop batter by heaping tablespoons 1 inch apart. Bake until cookies are lightly browned and firm, about 13 to 15 minutes.
5 Remove from oven and let stand 10 minutes. Move to wire rack and cool completely. Note: Store leftovers in an airtight plastic bag or container in the freezer.

Baked Red SnapperFlaky snapper fillets drenched in a flavorful combination of lemon juice, shallots and garlic

Ingredients
PAM Original No-Stick Cooking Spray
1 pound red snapper fillets (1 fillet = about 4 oz)
1/2 cup chopped shallots
1 cloves garlic, minced
1 teaspoon olive oil
1/4 cup fresh lemon juice (1 large = 1/4 cup juice)
1/4 cup chopped fresh parsley
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/8 teaspoon ground black pepper
2 medium tomatoes, each cut into 4 slices
Fresh spinach leaves and additional chopped fresh parsley, optionalDirections
Preheat oven to 350F. Spray 8x8-inch baking dish with cooking spray. Place fish, skin-sides down, in prepared dish. Set aside.
Combine shallots, garlic and oil in medium nonstick skillet. Cook over medium heat 3 to 4 minutes, or until shallots are crisp-tender, stirring frequently. Remove from heat. Stir in lemon juice, 1/4 cup parsley, the paprika, cumin and pepper. Pour over fish; top evenly with tomatoes. Cover.
Bake 5 minutes, or until fish flakes easily when tested with fork. Serve over spinach leaves and garnish with additional parsley, if desired.

Grandma's Tomatoe Sauce
You need
5 cloves garlic
2 tbs olive oil
1 medium onion sliced
enough thick sliced tomatoes to cover the cookie sheet. you can us any kind of tomato.
Line large cookie sheet with foil.
Put tomatoes drizzled with olive oil on cookie sheet in single layer, sliced onions and garlic
Bake 280-285 for 2 hours uncovered
let cool, after it's cool put it in the blender. Use right now or freeze.

ADOBO PORK CHOPS

6 boneless pork loin chops, cut 3/4 inch thick (1 1/2 to 1 3/4 pounds total)
2 tablespoons packed brown sugar
2 tablespoons olive oil
2 tablespoons orange juice
2 tablespoons snipped fresh cilantro
1 tablespoon red wine vinegar or cider vinegar
2 teaspoons hot chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano, crushed
1/2 teaspoon salt
1/4 teaspoon ground red pepper (optional)
1/4 teaspoon ground cinnamon
3 cloves garlic, minced
Directions
1. Trim fat from chops. Place chops in a plastic bag set in a shallow dish. For marinade, in a small bowl combine brown sugar, oil, orange juice, cilantro, vinegar, chili powder, cumin, oregano, salt, red pepper (if desired), cinnamon, and garlic. Pour over chops; seal bag. Marinate in the refrigerator for 2 hours to 24 hours, turning occasionally.

2. Drain chops, discarding marinade. For a charcoal grill, grill chops on the rack of an uncovered grill directly over medium coals for 12 to 15 minutes or until chops are done (160 degrees F), turning once halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place chops on grill rack over heat. Cover and grill as above.) Makes 6 servings

MY NEW RECIPE FOR PICKLES
SUGAR FREE REFRIGERATOR BREAD AND BUTTER PICKLES

6 CUCUMBERS ( USE LEMON AND REGULAR)
2 CUPS WHITE VINEGAR
1 CUP SPLENDA
2 TABLESPOONS PICKLING SPICE

1/3 CUP PICKLING SALT
ENOUGH COLD WATER TO COVER SLICED CUCUMBERS

WASH AND SLICE CUCUMBERS, PLACE IN LARGE BOWL ADD SALT AND WATER MIXTURE, LET SET AT ROOM TEMPERATURE FOR TWO HOURS.

RINSE WELL WITH RUNNING WATER.

MIX THE VINEGAR AND SPLENDA IN A SAUCE PAN AND ADD PICKLING SPICES, BRING TO BOIL AND LET BOIL FOR ONE MINUTE. POUR OVER RINSED CUCUMBERS. SET IN REFRIGERATOR OVER NIGHT, THE FOLLOWING DAY PLACE IN JARS AND COVER WITH THE PICKLING JUICE PLACE IN REFRIGERATOR , THESE WILL LAST A MONTH REFRIGERATED.

I am mixing up a soup, with 5 veggies.
5 VEGGIE MINESTRONE
1Tbs. olive oil
2 cans (14.1oz)of broth you choose(chicken, vegetable, beef).
1 can (15.25oz)Garbanzo beans, drained.
1 can (15.25oz) kidney beans, drained.
1 can (14.5oz) Italian-style stewed tomatoes, drained.
2 cups swiss chard (cooked)
1/2 cup small pasta (shells)
1 medium onion, coarsely chopped
2 cloves garlic finely chopped or 1/2 tsp minced garlic in a jar
1/4 tsp Italian seasoning
1/4 tsp white pepper
Garnish fresh basil, crushed red pepper optional
In medium saucepan cook onion and garlic in oil 3-5 minutes, until onions tender and translucent. Add the rest of the ingredients except basil: bring to boil. Reduce heat and simmer covered 10-13 minutes or until pasta is done. Serve with garnish.
Recommend using low sodium products.
Prep time 15 minutes
Cooking time 35 minutes

Crab cakes

Nonstick cooking spray
1 egg, lightly beaten
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1 tablespoon fresh lemon juice
Dash hot sauce
1/2 teaspoon crab boil seasoning (recommended: Old Bay)
1/2 cup finely chopped red bell pepper
1 scallion, including green top, finely chopped
1 pound lump crab, picked over for cartilage
3/4 cup dry bread crumbs
1/4 teaspoon salt
Freshly ground black pepper
Smarter Tartar Sauce, recipe follows

Preheat the oven to 400 degrees F. Coat a baking sheet with nonstick cooking spray.
In a medium bowl mix together the egg, mustard, Worcestershire sauce, lemon juice, Old Bay seasoning and hot sauce. Stir in the bell pepper and scallion. Gently fold in the crab, 1/4 cup of the bread crumbs and salt and pepper to taste. Put the remaining bread rumbs in a shallow dish.

Divide the crab mixture into 8 mounds. Shape 1 mound into a round and coat in bread crumbs. Transfer to the prepared baking sheet and flatten the crab cake to form a patty about 1-inch high. Repeat to form the remaining crab cakes.

Bake until golden on the bottom, about 10 minutes. Gently flip the crab cakes and cook until the second side is golden, 5 to 10 minutes longer.


Smarter Tartar Sauce:
6 tablespoons nonfat plain yogurt
2 tablespoons mayonnaise
1 scallion, finely chopped
1/4 cup finely chopped sour pickles
1 tablespoon chopped capers
Spoon yogurt into a small bowl lined with paper towels. Place in the refrigerator for 1/2 hour until some of the liquid from the yogurt is released. Scoop thickend yogurt into a small bowl, add the rest of the ingredients and stir to combine.

Yield: 3/4 cup

Vinegar Pie Recipe

From "The Little House Cookbook"By Barbara m Walker
Sometimes called "poor-man's pie" it took the place of lemon pie in areas where lemons were as precious as gold.
butter 1/4 C
Eggs 2
Granulated sugar 1/2 C
Brown sugar 1/2 C
White flour1/4 ( unbleached all purpose)
Nutmeg a few grinding
Vinegar 3 tablespoons
9 inch pie crust
1 cup water

Preheat oven 400 degrees
melt butter
beat eggs in small bowl
In large bowl blend both sugars,flour, and nutmeg with fingers until no lumps remain. Stir in vinegar, eggs, butter and 1 cup water until well mixed. pour into pie shell and bake at 400 degrees for 30 minutes. Remove and cool until filling is firm enough for cutting.

ASIAN STIR FRY

3/4 lb salad shrimp, thawed
3 large garlic cloves, minced
3/4 c onion, sliced
1/4 tsp salt
1/4 tsp cayenne pepper
1 Tb canola oil
1-1/2 c snow peas
1-1/2 c red pepper, chopped
1-1/2 c carrots, chopped
1-1/2 c broccoli, chopped
2 Tb vegetable broth
1 Tb lemon juice

1. Place drained shrimp in a bowl. Add salt and cayenne to shrimp. Toss well.
2. Heat oil in a wok on high.
3. Sauté shrimp stirring frequently, about 5 minutes.
4. Place sautéed shrimp back into the bowl leaving the liquids in the wok.
5. Combine the onions and garlic in the wok and sauté, about 3 minutes.
6. Add peas, vegetables and broth to the wok.
7. Reduce heat to medium and cook until vegetables are crisp-tender, about 4 minutes.
8. Return shrimp to wok, add lemon juice and cook for 1 more minute.

Servings 6, Fat 2.5g, Calories 153

Optional: Serve over a bed of rice and add a dash of soy sauce. I use brown rice instead of white.
Add rice calories to total calories per serving.

Cranberry and Wild Rice Salad

Served chilled, you've never had wild rice like this.


1 cup wild rice
1 teaspoon salt
1/2 cup walnuts
8 oz. cranberries, fresh or thawed frozen
1/2 cup sugar
2 tablespoons olive oil
1 tablespoon rice vinegar
3 green onions, chopped, including green tops


1. Combine wild rice, salt and 1 quart water in a large saucepan. Bring to a boil over high heat. Cover, reduce heat, and simmer until rice is tender to bite and most grains have split open, 45-60 minutes. Drain in a colander and let cool.

2. Meanwhile, spread walnuts on a cookie sheet and toast in a 325° F oven until lightly golden, about 10 minutes. Coarsely chop.

3. Sort cranberries, discarding any stems and bruised or decayed fruit; cut each cranberry in half.

4. In a saucepan over medium-high heat, stir the sugar and 1/2 cup water until the sugar is dissolved and mixture boils. Remove from heat; stir the halved cranberries. Gently stir occasionally until insides of cranberries have turned red but are still firm, 8 to 12 minutes. Pour through a strainer into a bowl, reserving the cranberry-sugar syrup.

5. In a large bowl gently mix wild rice, cranberry halves, oil, and vinegar. Stir in 2 tablespoons cranberry syrup; taste and add up to 1/4 cup more syrup to sweeten and moisten salad as desired. Stir in green onions. Cover and chill for at least 4 hours or up to 1 day.

6. Stir in walnuts before serving.

Serves 8.

I like to substitute almonds for the walnuts for a change of pace.

I love smoothies with strawberries. Here's one I have instead of a milkshake. It's from Cooking Light

Tutti-frutti Smoothie

This creamy drink is ideal for an after-school snack, breakfast, or dessert.

Ingredients
1 cup sliced ripe banana (1 medium)
1 cup orange juice
3/4 cup sliced peeled peaches
3/4 cup sliced strawberries
1 tablespoon honey
Ice Cubes to give crunch


Preparation
Combine all ingredients in a blender; process until smooth. Serve immediately.

FRESH CORN SALAD


4 cups barley, cooked
1 cup frozen corn, thawed
1 cup green onion, sliced
½ cup red bell pepper, chopped
½ cup green bell pepper, chopped
½ lime peel, grated
2 Tbs lime juice
½ cup balsamic vinegar
3 Tbs vegetable oil
1 ½ tsp dill weed
½ tsp salt
1. Prepare barley according to package directions. Let cool.
2. Combine barley, corn, onion and peppers together in a large bowl.
3. To prepare dressing combine lime peel, juice, vinegar, oil, salt and dill in a small bowl. Whisk to blend.
3. Pour dressing over corn mixture. Toss well.
4. Cover and refrigerate.
Makes 12 Servings. Per serving: Cal 124, Fat 4g, Chol 0mg, Sod 94mg, Carb 22g, Pro 2g
