Good question...Is there a use by date or sell by date on the box? I use bulk pectin called Dutch Gel from a local Amish Pantry. I get a bag that is enough for 9 batches for $4.00. No date on the bag but I use it so fast that it doesn't matter...LOL.

Will you send me the info on how to dry the greenbeans, i bought the dehydrater last year or maybe even the year before after we talked about it but I still have not used it. How do you store the beans after dehydrating them? Do they sit on the shelf or go in the freezer? Thanks for all the good info you share. Debby

I freeze my pumpkin puree. But this year, I'm in the drying mode...I'm going to try to dry some and see how it works... My first attempt was drying green beans and after drying them, I made a pot of soup and put the dried beans in it. They rehydrated wonderfully. Just like canned green beans ! I'm Sold !!!!

Sorry Buellrider, but it's not recommended to can pumpkin puree. You can can pumpkin chunks, though.

The only thing I have canned is tomatoes. I've tried making ketchup but it didn't turn out. I am hoping to get several pumpkins growing in my garden to puree and can.

Thanks for posting this, I have limited experience in canning. We are in the process of buying our "forever home". Once we move in, that's when we're really going to start growing and preserving. I can't wait to get going!

Ball's Getting Started Guide...Some GREAT info here... I found this to be one of the best basic guides while doing my research. Instead of typing out all of the info, It's all right on this pdf.
You can save this and all links to a file on your computer for future reference...
My Best Tip for You.... I find if I have everything I need for a project out and Ready before I start, it makes the process much easier. Read all of the instructions at least once before you start anything. I've been canning for 50+ years and I still read ithe directions and recipe before I start... Sometimes I think I know what to do but then I find out I forgot something !!! (age related !!!) LOL
Let's see how this goes. If we get a good response, I'll keep the classes going.
