Hi everyone!
I think it was me that mentioned the Amish Dutch Gel...I didn't know they have a lite one tho...I must find that !
Also, I always turn my jams upside down but not to help seal them. I turn it so the fruit isn't all at the top. I turn the right side up after about 10 mins so the fruit will be distributed thru the jam.
I am diabetic so I have used the Low/No sugar sure gel, I just boil it longer than instructed. About 5 mins. It sets good.

I tried splenda, and less sugar last summer with not much luck. I tried many different batches.

I've never made/canned jam before and i generally plan my berries for other things.

We now have a semi-local amish warehouse that carries staples instead of prepared goods.
I purchased " Natural Dutch Jell Lite For Sugar Free Jam and Jelly". Someone mentioned it on here in that past that they used the amish brand but I don't remember if theirs was sugar free. I'm looking forward to trying it.

I have my lids in a hot water bath & jars in the oven too!

I use the no/low sugar surejel and then use only Splenda. Just be sure to mix the Splenda in cool liquid because it tends to lump up in hot liquids. I also do not water bath nor do I turn them upside down. I do have my lids in hot water and my jars in a hot oven until I fill them.
So far my jars have all sealed.

Yes I do turn the jars upside down. I can't remember which canning site I read about that on. Ball, maybe? I was sceptical at first but tried it anyway. It seems to work well. Like I said, I rarely have a jar not seal.

I too have used the sure jell no sugar pectin, but I add a scant cup of sugar.

You turn the jars upside down? I've always been told to never tip/turn or even touch the jar lids during the first 24 hours of processing. Thanks for the tip on pectin. I'll give it a try. I've had trouble getting that one to set before, but I think I need to get a thermometer, rather than eyeballing the boiling.

Use Sure Jell's Low/no suger pectin when I make jam. I use the low sugar directions & love the results. I share my jam & everyone tells me how godd it is & you can taste the flavor the fruit not just tasting really sweet. Good luck!
I also quit using the water bath after reading about another method. I now turn my jars upside down as I put the lids on them and leave them for at least 5 minutes before turning them back upright. It is very rare that I have a jar not seal.

I use a water bath canner, and I'd love to fund a low sugar (or low processed-sugar) recipie for strawberry jam.

I currently use one that is about 1pt or 2pts sugar to 1 pt fruit.

Do you have one that takes less sugar, or might allow for honey or a more natural sugar? I'm trying to escape the processed sugars.
