Awesome i want to can my own sauce this year ! emoticon

The Lord is my strength and i know i can do better with the Lords help. The Lord laid it on my heart to start a team called GOD ANSWERS PRAYER AND I WOULD LOVE TO HAVE ANYBODY THAT WANTS HELP TO LOSE THEIR WEIGHT TO JOIN . I KNOW I CAN'T DO THIS WITHOUT THE LORDS HELP !

Vegetable Prima Vera Spaghetti Sauce for canning

1 C. vinegar
2 C. celery or 4 stalks
4 large green or colored peppers
1 large onion
1 garlic clove
6 qts. tomato, crushed, puree,or juice all work
1 1/2 tsp. basil
1 tsp. bay leaf
1 1/2 tsp. oregano
1/2 of a large zucchini,
1 package of stir fry vegetables
1 C. salad oil

Chop all vegetables fine. Add all ingredients together. Boil on low 2 hours. For thicker sauce add 1 can of tomato paste and 6 tbsp. corn starch just before you place in jars. Hot water bath 10 minutes.

This looks like a great recipe. I just looked up how many Roma tomatoes are in a bushel as that's mostly what I grow, or some similar paste-type tomato, so it says I need 212 tomatoes for this recipe! I think I'm going to have to scale it down-I get tons of tomatoes in the summer, but that's still a lot of tomatoes!

This pizza sauce recipe also works for spaghetti sauce. I actually like it better than my spaghetti sauce recipe. My Grandson said he did too. I will post my spaghetti sauce recipe next week.

I, also, copied this for this summer...
For pasta sauce, I add sweet red peppers instead of the green and use basil instead of the brown sugar...
I'm diabetic and both of the above add the right amount of sweetness without using sugar...
more parsley also adds more sweetness...Also Celery/carrots boiled and ran thru the victorio...
OK Now I'm Drooling !!!!!!!!!!!!!!

Pizza Sauce for Canning

1/2 bushel tomatoes
3 lb. onions chopped fine
4 green peppers chopped fine
1 1/2 tsp red pepper (optional)
2 tsp. oregano
1/2 C. brown sugar
2 tsp. parsley
6 bay leaves
1/2 C. salt
2 tsp. garlic powder
Run tomatoes through victorio strainer. If you don't have one boil the tomatoes and run through a sieve or strainer. add all other ingredients. Boil 2 hours Add 8 6 oz. cans tomato paste for thicker sauce. Bring to a boil. Place in jars. Hot water bath 10 minutes. Makes 18-20 pints.
