My daughter is training to compete in figure bodybuilding.. not sure the actual name for it..something like that :) anyhow this lady has been her inspiration.. I have made her baked apple oatmeal.. and am excited to try this one next! :)

Makes 1 serving
Ingredients: •1/4 cup almond milk •1/4 cup water •1/4 cup old-fashioned oats •Dash cinnamon •Dash nutmeg •1/4 tsp. crystallized ginger •1/8 cup canned pumpkin •1/8 cup sliced almonds •1/2 scoop vanilla protein powder •1/8 – 1/4 cup water
Directions: •Bring milk and water to a boil in a small pot. Add oats, cinnamon, ginger, and nutmeg. Reduce heat to medium low and simmer until liquid is absorbed, about 7 to 10 minutes, stirring occasionally. •Once the liquid is absorbed, add pumpkin and slivered almonds. •Combine water and protein powder in a separate bowl. Mix with a fork until protein powder is absorbed. Pour protein mixture over oatmeal. Makes 1 serving.

PUMPKIN CUPCAKES 1 box of pund cake mix 1 cup pumpkin purée 1/3 cup water 2 large eggs 2 teaspoons pumpkin spice 1 teaspoon baking soda
Mix items, pour into cupcake containers, bake at 325 for ~ 20 min, top with vanilla icing.
I add a little more pumpkin spice to adds more flavor. I think it might be good with cream cheese frosting too but haven't tried it that way.

PUMPKIN SOUP: 1 cup onion, chopped 4 green onions, chopped 1/4 cup hard margarine or 1/4 cup hard butter 2 teaspoons all-purpose flour 1/2 teaspoon salt 1/8 teaspoon pepper 1/4 teaspoon ground ginger 1 cup vegetable stock 3 cups vegetable stock 1 (14 ounce) can pumpkin, without spices 1/2 cup light cream
Saute onion and green onion in margarine in large saucepan. 2 Saute until soft. 3 Mix in flour, salt, pepper and ginger. 4 Add first amount of vegetable stock, stirring until boiling and thickened. 5 Process in blender to smooth. 6 Stir in second amount of vegetable stock, pumpkin and cream. 7 Heat through.

Pumpkin Chocolate Cake (serves 12)
Ingredients 1/4 cup canola oil, plus more for greasing 1 cup whole wheat pastry flour 1/3 cup cocoa powder 2 teaspoons pumpkin pie spice 1 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon salt 1 cup sugar 2 eggs 1 (15-ounce) can pumpkin purée 1 teaspoon vanilla extract Powdered sugar, for dusting (optional)
Method Preheat oven to 350°F. Grease an (8-inch) square baking pan with oil and set aside.
In a large bowl, whisk together flour, cocoa powder, pumpkin pie spice, baking powder, baking soda and salt. In a separate bowl, whisk together oil, sugar, eggs, pumpkin and vanilla. Whisk flour mixture into pumpkin mixture until well combined then transfer batter to prepared pan.
Bake until the cakes pulls away from the sides of the pan and a toothpick inserted in the center comes out clean, 40 to 50 minutes. Set aside to let cool then cut into squares and dust with powdered sugar, if you like.

I'm sorry I have been NO help this past week or so!! I was traveling and dealing with in-laws and just have not been exercising!

Ricotta, Fig & Prosciutto Bruschetta
Ingredients 24 French or sourdough baguette slices, each about 1/2 inch thick 2 Tbs. olive oil 1 cup fig jam or preserves 1 1/4 cups whole-milk ricotta cheese 6 thin slices prosciutto, each cut into 4 pieces Freshly ground pepper, to taste Directions Toast the bread Preheat an oven to 350°F.
Arrange the baguette slices on a baking sheet and brush lightly with the olive oil. Bake until golden, 10 to 15 minutes. Transfer to a platter.
Assemble the bruschetta Spread each toasted baguette slice with a generous teaspoon of the fig jam. Top with a dollop of the ricotta and a piece of prosciutto. Season with pepper and serve immediately. Makes 24 bruschetta.

Ingredients 2 cups cranberry juice 2 cups strawberries 1 cup blueberries 1 cup watermelon chunks 1 banana 2 fresh figs
Directions Process the cranberry juice, strawberries, blueberries, watermelon, banana, and figs in a blender until smooth and creamy. Enjoy immediately or keep cool in refrigerator. Nutritional Information

Preparation: In a large mixing bowl, using a hand held electric mixer, cream butter and brown sugar. Add eggs, grated lemon peel, and vanilla; beat well. 1 Place figs in 1 quart of water in which salt has been dissolved. 2 Let stand overnight. Drain. 3 Make a syrup of the sugar and 1 pint water. 4 Add figs and cook gently until the syrup is m ostly absorbed. 5 While cooking, watch carefully! Do not stir, but lift kettle and shake figs. 6 Put on plates and turn daily until dry. 7 Pack in powdered sugar.

Oatmeal with figs, raisins and apricots.
2 cups water 2/3 cup quick-cooking rolled oats 1/4 cup raisins 1/4 cup dried apricot, sliced 2 dried figs, quartered 1 tablespoon sugar 1/2 teaspoon vanilla extract 1/2 teaspoon ground cinnamon 1/8 teaspoon ground cardamom 1/8 teaspoon salt
1 Add water to a saucepan; bring to a boil. 2 Stir in the oats, raisins, apricots, figs, sugar, vanilla, cinnamon, cardamom, and salt. 3 Bring to a boil; lower heat to med-low; simmer, uncovered, for about 5-10 minutes or until the liquid is absorbed and the fruit softened.

Snip off the figs' stems, and put them, the dates, and the almonds into the food processor. Grind to a coarse paste. Stir in the remaining filling ingredients and process until mixed. Set aside.
Crust:
1 cup regular or quick oats, ground in blender until fine 1 cup regular or quick oats, uncooked (not instant oatmeal) 1 teaspoon baking powder 1/4 teaspoon salt 4 ounces unsweetened apple sauce 3 tbsp. agave nectar (or other liquid sweetener) 1/4 cup water
Preheat oven to 375 F. Combine the dry ingredients in a mixing bowl. Stir in the wet ingredients, mixing well to a thick consistency. Press half the crust mixture into the bottom of an oiled, eight-inch square cake pan (use a wooden spoon or your hands). Spread the fig mixture evenly over the crust. Smooth the remaining crust mixture over the filling. Bake for about 30 minutes, or until lightly browned. Allow to cool completely before cutting into bars.
Icing (optional):
Mix powdered sugar (about 3 tbsp.) with a little water (Start with 1/2 tsp.) until the right consistency. Add vanilla or almond extract to taste (just drops). Drizzle over top of bars before cutting.
Makes 16 bars. Each bar (with almonds) contains: 117 Calories (kcal); 1 g Total Fat; (10% calories from fat); 2 g Protein; 26 g Carbohydrate; 0 mg Cholesterol; 67 mg Sodium; 4 g Fiber
