Your lunch sounds yummy! I like spaghetti squash with a little bit of pesto.
I belong to a local food Spark team, and it's a great place to get ideas about eating local. Our team leader recently changed the team name to "Interesting Food" but it still has a local food emphasis, if anyone's interested.

Spaghetti squash for lunch today! I'd never tried it before. After it was done and scraped, I topped it with sauteed: gr. pepper, garlic, onion, plum tomato, chopped olives. Sprinkled a tablespoon of parmesan, salt, and pepper on top. Yummy!
Joining a CSA was the best thing I ever did for my "food miles" and eating healthy! The regular share size was too big for just me, so I have recruited various friends over the last 2 years and now am part of a group of people who split up 3 shares every week. Not only are we supporting a local (female) small business owner/farmer, but our food only travels 30 miles from dirt to plate, it's all organic and cheaper than a grocery store, and it forces me to try new and interesting foods I wouldn't have purchased otherwise!

This is really informative! I belong to a natural food store listed in my area & my sister buys from a local market not listed. I think that one listed on the site you mentioned may become her new one due to it being closer.
That's pretty cool. I can imagine it's more difficult to find seasonal produce in CO this time of year than in MO. We can still get some greens, potatoes and other root crops, plenty of squash and herbs. Good luck there!

If you are wanting to eat more locally and according to the season, you can enter your state and time of the year, and it will tell you what is available. With the snow we've been having, it's hard for me to imagine any sort of plant filling the bill in Colorado, but there are quite a few. I'm having Ginger-Carrot Soup for lunch today, and the carrots are on the list.
