1/2 cup minced onion SWEDISH MEAT BALLS TO ME EASIEST
4 tablespoons butter
1 1/2 pound ground meat
2 eggs, slightly beaten
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon nutmeg
1 teaspoon paprika
1 cup water
3 tablespoons Atkins Bake Mix or other low-carb flour
1 cup sour cream
1/2 teaspoon dill (dried)
OR
1 1/2 tablespoon minced fresh dill

directions
Cook the onion in 1 tbsp. butter until soft, about 4 minutes.

Mix the meat, eggs, salt, pepper, nutmeg, and paprika in a bowl. Add the onions and mix well.

Melt the remaining 3 Tb butter in a frying pan on medium heat. Put the meat mixture into the pan when hot, and let it cook for a while as one big chunk (it helps to spread the meat out like an omelette).

When it's brown on one side, break up the meat into smaller chunks and flip them over to brown the other sides. Continue cooking until the chunks are browned and cooked through, then remove them from the pan.

Turn the heat down to low, and add the water. Using a sifter or strainer (to avoid lumps), sprinkle the Atkins Bake Mix into the pan while stirring. Cook for about 5 minutes, or until thickened.

Add the sour cream, a spoonful at a time, stirring until well mixed. Add the dill, and mix well. Add back the meat, and cook on low for about 10 minutes.

Serves: 12Yield: SLOW COOKER

meatballs Units: US | Metric
4 slices White bread, finely chopped
2 lbs lean ground beef
4 egg yolks
4 tablespoons chopped fresh parsley
2 tablespoons dried onion flakes
1 teaspoon salt
1 teaspoon mustard powder
1 teaspoon ground ginger
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
1 (10 1/2 ounce) can condensed French onion soup
1/4 cup all-purpose flour
1/4 cup sour cream
1 tablespoon Worcestershire sauce
Directions:

In bowl, combine bread with 1/2 cup water; let stand until absorbed (about 2 minutes).

Stir in beef, yolks, 2 tablespoons parsley, onion, salt, mustard, ginger, garlic, and pepper.

With wet hands roll heaping tablespoonfuls of meat mixture into balls, about 60.

Place in crock pot.

In bowl, mix together soup and flour; pour over meatballs.

Cook on high until cooked through (about 4 hours); stir.

Stir in sour cream and Worcestershire sauce.

Serve sprinkled with remaining parsley.

I'm sure you could use Swedish Meatballs. I haven't yet tried a low carb meatball but the Swedish Meatballs are my regular favorite. Do you have a low carb recipe for that?
