I cannot eat much in the way of breads, but the other day I pour some whipped egg white into the pan and tilted the pan to make it spread out as much as possible. Flipped it, and took it up as a crepe and put sandwich stuff in it and it was better than nothing.
~~-•~•~•- ••--•~ ~~ ....as for me and my house, we will serve the Lord Joshua 24:15
I'm really into baked goods too. I took a bunch of recipes from the Provida site and have been going through them. I eat banana-berry or pineapple cake for breakfast, muffins for snacks, and am going to attempt cookies soon. There are so many options and they all have just a few, easy to find and cheap ingredients. I can send you a .doc file of all the ones I've picked out (haven't tried them all yet though) if you'd like.
My favorite 2 are from the providia site. I normally eat them for my snacks. You'd have to adjust or add to the recipe based on what type you are.
Rice "Pudding" 1/2 c. cooked brown rice 2 egg whites 1 tsp. Splenda dash of cinnamon dash of vanilla extract I usually add a bit of water too, so it doesn't dry out. Mix with a fork. Microwave until eggs are cooked.
Sweet Potato "Pie" 1/2c. cooked, mashed sweet potato 2 egg whites dash of cinnamon dash of nutmeg 1 tsp. Splenda Mix with a fork. Microwave until eggs are cooked.
A small bowl of oatmeal w/apples or bananas curbs my sweet tooth too.
I have from time to time put apples with sweetner and cinnomaon in the microwave for couple of minutes and it makes it feel like I am having an apple pie with out the crust. I think it is pretty good.
Maybe you haven't reached all your goals yet-but who has? And maybe you've made a few mistakes along the way-but who hasn't? You have every reason to feel proud of who you are. Notice your triumphs, big and small. There are so many.
I am a sucker for baked goodies..Does anyone have any recipies for 6wbm friendly baked 'desserts' I understand that they won't be the flour filled, sugar coated things my waistline is used to, but I am trying to be as 'normal' as possible so I don't feel like, 'Well I just don't want to do it b/c I can't have xyz.'
