I love pickles (okay, not enough to marry 'em but we sure were at consenting adult level) and on the Fitness PLAN they have TOO MUCH sodium! ugh! What to do? I put the 'ol Thinking Cap on and made a Cucumber Salad (kinda'). I combined, very thin, sliced (no peel..yuck!) cucumbers and purple onions in a plastic bowl (I UP-cycled a deli salad bowl). I added approx. 1/2 cup of apple cider vinegar-or more to your liking-a dash of salt n' pepper (House Seasoning, I call it). Mix ALL of this together and store in the 'fridge overnight. Around lunch time I have it on the side with my protein, carb, and veggie. I don't miss the pickles at all!
I turned Easter Day around and made it work for me. Instead of going out with friends I invited them to Brunch and a late night dinner. Our guests loved everything and it was all on MY plan. Drinks we're 0 cal Vanilla Chia Iced Tea or 0 cal Pink Lemonade w fresh lemons from the tree. I served salad w/0 cal blue cheese dressing topped with real Gorgonzola cheese and croutons (NOT ON MINE). Dinner was a bowl of mussels and clams in SF red sauce. I added it to an eggplant ragu for thickness and veggies. Of course they enjoyed extras like fresh baked bread, cheese tortellini pasta and brie cheese. No one even noticed or cared, that I wasn't eating those things. Everyone loved my SF dessert. and wanted the recipe. It was simple... A small slice of SF angel food cake soaked in SF strawberry banana jello then chilled to set in small individual dishes....I served it with fresh strawberries and a dollop of fresh SFwhipped cream. Yummy! And didn't add any additional lbs.

In my quest for "real" mexican food yesterday, I went to the store with every intention of getting a can of refried beans. Oh HE|| no when I read the label - WHOA NELLIE on the sodium!!! So, without having time to soak some pintos, I bought two cans of low sodium, organic pintos and rinsed them like crazy when I got home. Then I put them in a saucepan and added diced onion, jalapeno, some cumin, chili powder, and cayenne. A little water for consistency and VOILA :) Didn't want a bunch, just enough to spread a little on one of my workable cheats - a plain corn tortilla (these are small, 60 cals, each and only 5 mg. of sodium, 1 gr fat) Then top it with a little home made salsa, a few crumbles of spiced sirloin and some shredded lettuce. MMMMM! The leftovers will last me easily this whole week. And this always tastes better than anything I can buy pre-made!!!
