I have been buying chips called "Beanitos". They're like tortilla chips, but there's no corn in them. They're made from black beans and rice or pinto beans and rice. In a once ounce serving (which is about 10 chips) they have 140 cals, 15 carbs, 5 grams of fiber, 4 grams of protein. I had them for lunch yesterday with a bowl of refried beans and salsa - one of my favorite quick meals. I get them at my local health food store, but I bet Whole Foods carries them. You can order them from Amazon too, I believe, but I haven't tried that.

I have been staying away from salt as much as possible so I have been eating rice cakes too.

I like the carmel ones.

I also like their crunchy.

I think that is why I like the pork skins...they have both protein and fat. They might not be really nutritional but then that is what the adkins diet suggested munching on way back when I was on it. I only eat about a 1/2 oz. and it satifies the need for something crunchy. I also like the soy crisps but I ate them so much I got tired of them. I have even slacked off the pork skins because I am getting a little tired of them. Mostly I eat almonds now.

I think the soy crisps have somewhere in the mid-teens as far as carbs go, but they have a little more protein to them, which helps to slow down the release of the carbohydrate. I think you also have to keep in mind that as much as we need to watch our carb intake, we also need to be thinking about the nutrition of what we are eating...I don't think you are going to find a lot of nutrition in pork rinds, and I wouldn't necessarily call those a healthy choice just because the carbs are zero. I suppose the same may even be true of the soy crisps. I think your best bet might be to allow yourself something with healthy carbs in moderation, in the form of something very whole grain and nutritious, just don't eat a huge portion, and make sure you are eating some protein and fat with it to balance it out so it doesn't cause a big spike in your insulin level.

Soy Crisps are very much around. I tried them a few months ago. They didn't grab my tastebuds, but plenty of people like them.

I don't even know if they make them anymore, but when I was doing Atkins and South Beach years ago, I used to love these chips called Soy Crisps. They were puffed and very crunchy and came in different flavors. I used to get them at Cub Foods (my local grocer) but you may find them online also. I have thyroid issues now, so I try to avoid soy foods, so haven't had them for a long time.

Something I just found is Wasa Crisp 'n Light 7-grain crackers. Each cracker is about the size of a long graham cracker, and 3 of them is only 60 calories, 13 grams of carbs, 2 grams of fiber. I put a little whipped cream cheese and smoked salmon on it, and it was delish!

I also have had roasted edamame (soy nuts) but again, I avoid these now.

Jacquie took my answer. The only chrunchy snacks I eat are almonds, pistachios (unshelled...takes longer to eat and looks like you are getting more) and pork skins. Pork skins have no carb and adds protein.

They're not low carb but lower calories - rice cakes or popcorn cakes. Quaker makes a variety of flavors.
For crunch there's always celery, but it doesn't satisfy me. Carrots are a little better.

How about Roasted chickpeas
2 (19 oz) cans chickpeas rinsed and drained
3 tbsp (45 ml) canola oil
*I ONLY USE 1.5 TBSP OIL
1/2 cup (125 ml) spices (cajun, curry, garlic...etc your choice)
*I ONLY USE 1 TBBSP SPICES
- Preheat oven to 400*F (200*C)
-Combine all ingredients in a bowland spread onto parchment lined or greased cookie sheet.
- Bake for 30 minutes. Stir.
-Bake another 20 minutes, stirring every 5 minutes.
Let cool and enjoy.

*THERE WILL BE LESS SODIUM ETC FROM USING THE LOWER AMOUNTS OF SPICES AND OIL.
