So I came home on my lunch and added some veggies. I took the chicken and veggies out to make the sauce and then returned it all to the crock pot. The kids actually ask me to fix it again. It is a winner!

I was thinking about adding veggies in but did not this morning. However I may go home at lunch and add them in that way they are not over cooked. Hopefully the kids will like it.

I do this recipe a lot, but I also add in about 36oz of mixed vegetables at the end, and instead of the salad dressing mix (WAAAAAAAY too much sodium!), I do this mixture with the chicken as it cooks:

1 tsp oregano
2 tsp italian seasoning
1 tsp basil
3-4 cloves garlic, minced or pressed
2 tsp onion powder
1 tsp thyme

It comes out DELISH and with quite a bit less sodium in it.

So I was looking for slow cooker recipes on Sparkpeople and I found the Slow Cookeer Creamy Italian Chicken. I think I am going to try it tomorrow since we have cubscouts and I don't have alot of time to cook before having to be at the school. I have to go tonight to pick up the chicken for it. I have everything else. It is

2 lbs boneless skinless chicken breast
1pky Good Seasons Italian dressing mix
1/2 cup water
1 8 oz pkg of Fat cream cheese
1 can 98% fat free cream of chicken soup
3 cups cooked white rice.

Put chicken in crock pot
mix together dressing and water and pour over chicken
cook 4 hours on high or 8 on low
mix together cream cheese and soup in separte bowl.
remove chicken from crock pot to plate
pour cream cheese/soup mixture in crock pot and mix together with dressing on the bottom
return chicken to crock pot and mix gently to shred the chicken
cook on low until heated
serve over rice or noodles.

can add low fat milk in small quantity to thin the sauce a little if you want.
Makes 6 servings about 2/3 cup mixture over 1/2 cup rice
368 calories.
