Today's new chicken recipe: Easy Crockpot Chicken

3 lbs. chicken pieces
1 can (10.5 oz) Condensed cream of chicken soup
1 can (10.5 oz) Condensed cream of mushroom soup
1 can (4 oz) mushroom pieces, drained
1 bell pepper, sliced
1 onion, sliced
Dash salt, pepper & garlic powder
1/2 c. white wine (I used chicken broth instead of wine)

Wash & dry chicken pieces. Place in CP. Combine remaining ingredients & pour over chicken. Cook on low for 6-7 hours or on high for 3-4 hours.
Serve with noodles or rice.

Chicken falling off the bones. Good gravy to put over the rice. DH & I liked it.

Well maybe someone else will respond; as for me I don't think I've ever cooked chicken together with sweet potatoes in the crock pot, and I definitely don't have a fav recipe for it.

I would check these websites:

Also do "control F" and search for sweet potatoes in this thread. Since this is a poultry thread, it will likely be a chicken recipe and if not then you can easily substitute chicken for the turkey or duck, etc.

Another thought: you could make Hawaiian chicken with pineapple* (*pineapple not good for 10 hour days; add after you get home), bell pepper*, onion, sweet and sour sauce. That would go good with sweet potatoes. You could search for Hawaiian crock pot chicken at the above sites and this thread.

All Day Crockpot Chicken has 6 ratings, 5 of them thumbs up. If you make this, be sure and tell us how it turned out. This recipe calls for breasts, which you typically can't cook all day; and the cooking time specified is 5-6 hours on low. So I'm not sure why it's called "All Day" chicken; I'm thinking because they're including the time to marinate. Myself, I'd just marinate overnight, and put it in at 11am to have it for dinner. The reviews said it was delicious, anyway.

All Day Crockpot Chicken
A crockpot chicken recipe with orange marinade. This chicken needs to marinate, so start very early in the morning or the night before.

Marinade Ingredients:
•2 cups chicken broth
•2 tablespoons frozen orange juice concentrate
•1/4 teaspoon pepper
•1 can (6 ounces) tomato paste
•2 tablespoons soy sauce
•2 tablespoons brown sugar
•2 cloves garlic, minced
•dash ground allspice
•dash ground ginger
•1 teaspoon salt

Chicken and Remaining Ingredients:
•6 chicken breast halves
•6 to 8 ounces sliced mushrooms
•2 tablespoons butter
•1 can (11 ounces) mandarin oranges, drained
•1 small bell pepper, green or red, seeded, cut in strips
•1/4 teaspoon ground ginger
•3 tablespoons cornstarch
•1/4 cup cold milk
•1/4 cup cold water

Preparation:
Combine marinade ingredients in a non-reactive container with lid or a large sealable food storage bag; blend well. Add the chicken to marinade; cover or close bag and refrigerate for 6 to 8 hours, or overnight.

Place the marinated chicken in the slow cooker. Add marinade to cover chicken. Sauté mushrooms in the butter, then add to chicken and marinade in slow cooker. Cover and cook on LOW for 5 to 6 hours. About 1 hour before done, add mandarin orange sections, green pepper and ginger; stir well. When done, mix together the cornstarch, milk and cold water, then gradually add into the slow cooker while stirring; cover and cook 15 minutes longer, until thickened. Serves 6.

Crock Pot Thai Chicken Thighs

8 skinless chicken thighs
1 16 ounce jar salsa (cilantro) if you can find it
1/2 cup peanut butter (smooth or crunchy)
2 tsp. ginger
2 tbls. soy sauce
2 tsp. lime juice

Put all ingredients in crock pot, stir, cook on low -8 hours. Serve with Jasmine rice and a vegetable.

Found this recipe on Foods.com. I am making it today. Will let you all know tomorrow how it goes.

Crock Pot Chicken and Dumplin's

4- Boneless skinless Chicken breast
2-cans of 98% F.F. Cream of Chicken soup
1-can of store brand biscuits
1/3 C. water

poor water in crockpot, place chicken breast in bottom single layer, spread soup on top of chicken....pepper if you wish (but no salt the soup has enough) cook on high for 4 hours....then after the 4 hours, shred the chicken ( I do this by using two forks) then mix soup up together with the chicken, then pinch biscuits off bite size and place on all on top of the chicken/soup mixture put lid back on for another 30 min. it is so simple and we really like them.

***but I will tell you this, if you use the full fat cream of chicken soup, it taste less salty but of course more fattening (I sometimes take a can of each)

Homemade "Free" Chicken Broth

Buy split chicken breasts on sale for 99 cents per lb.
Skin and wash breasts, discarding the skin.
Debone and freeze the breasts (or use them for another purpose).
Put the bony portions with meat in the crockpot.
Fill crockpot with water, and veggies of your choice (onion, celery, carrot) and seasonings of your choice.
Cook 8 hours on low.
Strain and discard the bones and vegetables.
Freeze the broth in dated containers.

Adding a splash of vinegar to the crockpot helps leach out the calcium from the bones into the broth.

Chicken breasts in the Crock Pot cooking for lunch...added cream of chicken soup (99% fat free), little salt & pepper, 3/4 c. chicken broth, 1/2 lge. onion (chopped), 1 small jalapeno (chopped), & 4 oz. can of mushrooms (drained). Will cook 30 min. on high & then 7-9 hrs. on low. Plan to serve over mashed potatoes with peas on the side & a green salad. Mmmmm.

I modified mine a little bit this week. I didn't have a merlot either at home, but a pino. I will experiment with different wines and see what it does.

Three-Bean Turkey Chili

Hands-On Time: 10 minutes
Ready In: 3 1/2 to 4 1/2 hours
Yield: 6 servings
Ingredients

1 pound lean ground turkey
1 small onion, chopped
1 can (28 ounces) diced tomatoes, undrained
1 can (15 ounces) chickpeas, rinsed and drained
1 can (15 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (8 ounces) tomato sauce
1 can (4 ounces) diced mild green chiles
1 to 2 tablespoons chili powder
salt to taste

Directions

1. Cook and stir turkey and onion in medium nonstick skillet over medium-high heat until turkey is no longer pink. Drain and discard fat. Transfer to 4 1/2-quart CROCK-POT® slow cooker.
2. Add remaining ingredients; mix well. Cover; cook on HIGH 6 to 8 hours.


I added a can of corn to it. Only used 1 tbsp chili powder. It was SOOO good. I will definitely be making this one again and freezing some. So as far as the family's opinions... My bf added pepper to make it spicier and commented that he did not like the garbanzo beans in it. My 8 yr old did not like the garbanzo beans either but liked it other than that. My 2 1/2 yr old liked it okay but liked the split pea w/ham soup better. I'll be posting that one next. My mom and sis both thought this recipe was really good.

This is the link to the chicken I cooked yesterday while in church. I liked it, but DH wasn't crazy about it (think he is not used to the thyme & basil seasonings....may try it again using my own seasonings). My chicken breasts were much larger than 6 ounces so only cooked 2 and had to cook longer, but were tender & not dry.

Green Apple and Chicken Slow-Cooker Stew

1 lb. potatoes, peeled and sliced 1/4" thick
1 lb. carrots, sliced 1/4" thick
1 lg. tangy green apple (Granny Smith is ideal), with peel, thinly sliced
6 boneless skinless chicken breast halves
2 cloves garlic, finely chopped
1 T. dark brown sugar
1 t. salt
1/2 t. cayenne pepper
1/4 t. freshly grated nutmeg
1/8 t. ground cloves
1 c. unsweetened apple juice
2 T. fresh lemon juice

Layer the potatoes, carrots, and apple in a slow cooker. Cover with the chicken breasts.

Sprinkle with the garlic, brown sugar, salt, cayenne, nutmeg, and cloves. Pour the apple juice and lemon juice other the top.

cover and cook on low until the chicken and vegetables are very tender, 6-8 hrs. Serve hot.

Serves 6 : Prep 30 min. : Cooking 6-8 hrs.

Crock-pot Pheasant:
pheasant breast
salt and pepper
flour
brown in butter. Put in crock--pot dish

Mix cream of asparagus soup
cream of chicken soup.
1 T soy sauce
1/2 c celery chopped
1/2 c onion chopped
1 can mushrooms with juice

pour over pheasant. Cook on low 6 hours.

SWEET AND SOUR MEATBALLS
Use your favorite meatball recipe. Use ground chicken or turkey. Add seasonings to taste. or buy frozen prepared meatballs. (This would also work with beef or pork meatballs)

Sauce
3 tablespoons vinegar
3 tablespoons cornstarch
1/2 cup sugar
1 tablespoon soy sauce, low sodium
1 large sweet bell pepper, cut into 1-inch pieces
1 can pineapple, chunks (15 ounces)
Preparation:
Transfer meatballs to slow cooker.
In a small bowl, combine vinegar, sugar, 1 tablespoon soy sauce, cornstarch and bell pepper; stir to blend. Pour over meatballs. Cover and cook on LOW for 5 to 7 hours. In the last 30 minutes of cooking, stir in pineapple with juice. If thicker juices are desired, combine more cornstarch with a little cold water and add, stirring, until thickened. Serve with hot cooked rice.
Serves 4.

In addition to the changes I mentioned yesterday, I went to a local farm and bought free range, vegetarian fed chicken to fix this recipe. Ended up with more chicken than recipe calls for, so adjusted spices, etc. Put in extra chicken broth and took out some near the end of cooking time to make some quinoa. Served with steamed mixed vegetables and quinoa. Hubby's been in Orlando on business this week, and he was ready for a home cooked meal. We both liked this one a lot. Since we are empty nesters, I'm trying to decide what to do with the leftovers. Any suggestions?

CarolFW, I'm trying the Lemon Garlic Chicken that you posted a link to back in January. It sounds really good. I read the reviews, and I put in lemon pepper, more garlic, sliced mushrooms, and a good spash of white wine. I also used chicken broth instead of water and bouillon. Will add some kind of veggies near the end of cooking, as suggested, or steam some, and will serve with quinoa. Will post later on how it turns out.

P.S. I have found that making quinoa with broth (vegetable, chicken, or beef, depending on the rest of the meal's ingredients) instead of water gives it a really nice flavor. It's much better than rice plus much better for blood sugars, carbs, etc.

emoticon It's a new day but I'm still stuck in my folder 'Mexican Flair'. This one that I'm posting today is a 2-fer. It's a super easy dish to make and at the end you can use your leftovers for a really tasty soup. Hope you like it.


Crockpot Chicken Tacos
(With Leftovers for Tortilla Soup!)

Prep Time 5 Minutes
Cook Time 6 Hours
Servings 4

•1 envelope Taco Seasoning
•6 pieces boneless, skinless Chicken Breasts
•1 jar Salsa (16 0z)

Dump everything into a crock pot and give it a little stir to blend the seasoning with the salsa.

Cook on high for 4 to 6 hours or on low for 6 to 8 hours.

When done, the chicken should shred easily when stirred with a fork.

For tacos, serve the chicken with soft flour tortillas, lettuce, shredded cheese and sour cream.

This is very versatile and can be used for enchiladas, nachos, tostadas, etc.

Any leftover chicken can then be used for tortilla soup ...
(make it the next day or freeze the chicken to use at a later time).



Tortilla Soup

approximately 1 cup of leftover chicken taco meat
1 32 oz box of chicken broth
1 can of Milder Ro-Tel (tomatoes with chilies)
1 can of corn, drained
2 Tbsps fresh chopped cilantro
1 Tbsp lime juice

Dump everything in a pot and simmer for about 30 minutes.
Garnish with crumbled tortilla chips and shredded cheese (Mexican blend).

Crockpot Chicken Burritos

This delicious burrito stuffing simmers in the crockpot and all of the wonderful flavors meld into a wonderful, healthy dinner treat.

Prep time 20 minutes
Cook time 6 hour 2 minutes

Ingredients

1 pound boneless, skinless chicken breast tenders
2 Tbsp. all-natural chicken broth
1 small finely chopped onion
1 clove minced garlic
2 seeded and chopped jalapenos
1 Cup whole kernel yellow corn, drained
1 3/4 tsp. chili powder
1 tsp. ground cumin
1 tsp.lime zest
2 Tbsp. lime juice
1 tsp. dried oregano
3 Tbsp. chopped fresh cilantro
6 10-inch flour tortillas
1 1/2 Cups diced ripe tomatoes
3/4 Cup reduced fat sour cream
3/4 Cup reduced-fat shredded cheese, Mexican-blend


Directions

1. Place chicken on a cutting board and chop into bite-sized strips and place in a crockpot.

2. Stir in the broth, onion, garlic, jalapenos, corn, chili powder, cumin, zest, lime juice, oregano, and cilantro.

3. Simmer on high for 5 hours.

4. Place equal portions of chicken mixture in the center of the tortillas and sprinkle with tomatoes and sour cream.

5. Fold burrito up 2/3 of the way to the other side over the chicken mixture and fold sides in towards the center.

6. Place on a large baking sheet; sprinkle with shredded cheese and broil for 2 minutes until cheese is bubbly.


You can serve with guacamole and salsa on the side if you wish but be sure to add the calories on.

Got this in email today from About.com's emailed crock pot recipe service:

Chunky Turkey Chili

Use ground beef in place of the turkey, or add a small amount of beef bouillon granules if you'd like a beefy flavor.

1 pound ground turkey
1/2 cup coarsely chopped onion
2 cans (14.5 ounces each) diced tomatoes with juice
1 can (16 ounces) pinto beans, drained, rinsed
1/2 cup salsa, your favorite
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
salt and pepper to taste
1/2 cup shredded Cheddar or Mexican blend cheese
sour cream
1 to 2 tablespoons sliced black olives

In a large skillet over medium heat, brown ground turkey and onion. Drain off excess fat. Transfer browned mixture to the crockpot with tomatoes, beans, salsa, chili powder, and cumin. Stir gently to blend ingredients. Cover and cook on LOW setting for 5 to 6 hours. Taste and season with salt and pepper. Serve with a dollop of sour cream and a little shredded cheese and black olive slices. Serves 4.

Crockpot Chicken Wings

Ingredients
•18 chicken wings
•1/3 cup of soy sauce
•2 garlic cloves, minced
•2 teaspoons of oil
•1 tablespoon of honey
•1 teaspoon of ginger
•1/3 onion, minced

Add Ingredients to Crockpot
In a crockpot mix the wings up with the other ingredients to make sure the garlic and onions cover all the wings adequately.

Cover the crock pot and turn it on low for six to eight hours. After about six hours the wings are done. The wings soak up all the flavors, and turn a nice golden brown.

New for Chicken and really good - Phillie Cream Cheese Mixers in the dairy aisle. Several flavors. We tried Chipotle. Added 4 big chicken breast, can of diced tomatoes, bad of chopped onions and the Phillie. The one tub of Phillie was more than enough. Bake at 375 for about 45 min. Took 5 min to prep and very good.

Yum, I bookmarked that one, too! Never heard of chicken adobo . . . I thought adobo was the garlic salt in the Goya section, or the red paste I love to grill chicken in that comes concentrated in the little jars.

Acadian Chicken Fricot

Tastes just like Grandma's but with slightly differnt seasoning. This was a hit!
This is the amounts I used for just 2 people, no leftovers. Use whichever root vegetables you have.

2 potatoes (I used Yukon Gold)
2 large carrots
2 parsnips
¼ rutabaga (yellow turnip, swede)
2 stalks celery
½ onion
4 chicken thighs, bone-in, skin removed.
2 cp chicken or veggie stock
1 bay leaf
½ tsp summer savoury (may substitute thyme or parsley but less Acadian)
6 peppercorns
1 tsp salt if stock needs it

Dice the onion; cut the other veggies into pieces 1" or less. Layer in crockpot.

Lay the chicken thighs on top.

Add the spices and pour chicken stock overtop.

Cover and cook 6 to 10 hours.

If desired, turn up to high and add dumplings for 20 minutes.

Serve in a bowl with the broth ladled on top.

Chicken Makani - i found it on a year of slow cooking, and another member had it already in spark recipes. I skipped the fat free yogurt - it made the sauce taste a bit funny. I also up-ed the cayenne to 1 tsp - and this was darn hot!!!

I also took off the lid for the last hour and turned it to high to thicken the sauce.

Just recently made Salsa Chicken in my crock pot. It was very good! Wanted to Share....


SLOW COOKER SALSA CHICKEN

COOK TIME: 8 Hours

INGREDIENTS:

- 4 boneless skinless chicken breasts
- 2 Tbsp Taco Seasoning
-1 can low sodium diced tomatoes
-1 small onion diced (about 1 cup)
-1/2 cup finely diced celery
-1/2 cup shredded carrots
-1 cup salsa
-3 Tbsp reduced fat sour cream

INSTRUCTIONS:

-Place chicken in slow cooker

-Sprinkle with Taco Seasoning

-Spread tomatoes, onion, celery, and carrots over top

-Then Cover with Salsa

-Pour 1/2 cup water over mixture

-Cover and cook on LOW for 6-8 hours

-Then shred chicken with 2 forks and stir in sour cream before serving.
