Orange-Glazed Pork Chops
1 tbs. brown sugar
1 tsp. cornstarch
1/2 tsp. grated ginger root
1/2 tsp. orange zest
1/8 tsp. ground red pepper
1/2 cup orange juice
1 tbs. low-sodium soy sauce
4 pork loin chops, about 3/4" thick with a total weight of about 1 1/2 lbs.
In a saucepan, stir together brown sugar, cornstarch, orange zest, ginger root and red pepper. Stir in orange juice and soy sauce. Cook over medium heat, stirring constantly until thickened and bubbly. Reduce heat to low; cook and stir for 2 minutes more. Keep warm.
Trim the any excess fat from the chops. Place the chops on the unheated rack of a broiler pan. Broil 4 inches from the heat 5 to 6 minutes; turn and broil for another 5 to 6 minutes or until juices run clear. During the last 5 minutes of broiling brush with glaze. Before serving, drizzle remaining glaze over the chops.
