Green Apple and Chicken Slow-Cooker Stew
1 lb. potatoes, peeled and sliced 1/4" thick
1 lb. carrots, sliced 1/4" thick
1 lg. tangy green apple (Granny Smith is ideal), with peel, thinly sliced
6 boneless skinless chicken breast halves
2 cloves garlic, finely chopped
1 T. dark brown sugar
1 t. salt
1/2 t. cayenne pepper
1/4 t. freshly grated nutmeg
1/8 t. ground cloves
1 c. unsweetened apple juice
2 T. fresh lemon juice
Layer the potatoes, carrots, and apple in a slow cooker. Cover with the chicken breasts.
Sprinkle with the garlic, brown sugar, salt, cayenne, nutmeg, and cloves. Pour the apple juice and lemon juice other the top.
cover and cook on low until the chicken and vegetables are very tender, 6-8 hrs. Serve hot.
