I'm making Ree Drummond's aka The Pioneer Woman's, Italian Chicken Soup. I'm leaving the cream out to make it a lighter broth-based soup, and I'm converting it to the crock pot. Ree doesn't do crock pots (I know, I know; we have to convert her!!)
I'm a little concerned about the zucchini and peppers; probably will add them an hour before the end.
And I'm definitely adding Italian white beans, cannellini, because they are so healthy and because they're Italian and because I have them . . . I will soak a cup tonight. I could even puree half of them (to replace the cream . . . ).
And I already made the broth from chicken bones, it's in the fridge just a waitin' on me. As are the zucchini and peppers. Yum!
