This week I'm making do with a toaster oven, no-cook foods like salads, crockpot, and my least favorite, a microwave, as I share a rental house and the stove is tagged out due to a gas leak, with no known date of repair. I have a rice cooker in ministorage that I'm going to get out if I can, for rice, pasta, and steamed veggies. I also have a small electric hotpot that I'll use if I can find it in ministorage. I don't have an electric skillet.

This week without a stove is a good week to thaw and use up frozen soup previously cooked in crockpot, as it's microwavable and already cooked. Great for the pantry challenge, too.

I tried to make last week's sausage soup with dried red kidney beans cooked from scratch, but I never saw the beans boil. You can do an online search about the weird toxin in kidney beans - they have to be boiled. So I have to take them to a friend's house and boil them on the stovetop before I can proceed with the crockpot soup. While there I might boil some eggs at her house, as well.

Breakfasts:
Instant microwave oatmeal I've been saving for the road, got free with coupons
Microwave egg scrambles - Denver, TexMex, Garden, etc.

Lunches and Dinners:
BLTs
Tuna Salad
Tabouli salad
Cucumber salad
Toaster oven baked sweet potatoes
Garden Pasta Salad with canned salmon - if I have the rice cooker
Crockpot BBQ beef from freezer
Browned ground beef from freezer - I made some taco meat with the first bag and it was really good, I'm going to make some more.
Crockpot soup from freezer
Crockpot sausage, cabbage, & red bean soup
Leftover Buffet

1 fruit before ea meal

Wed Aug 3:
(batchcook; BC) Blueberry cinnamon oatmeal and boiled eggs
Homemade chicken soup w/grilled cheese
CP BBQ beef from freezer on bun, CP baked beans from dried, & homemade garden potato salad
1 fruit before ea meal

Tex Mex (or Taco) Thu Aug 4:
Homemade egg McMuffins
Browned ground beef in freezer for tacos, Spanish rice, guacamole & chips
BLT with veggies or tabbouli or potato salad
1 fruit before ea meal

Fish Fri Aug 5:
(batchcook; BC) Breakfast burritos with freezer ham, canned green chilies, onions, stockpiled salsa
Salmon Pasta Salad with side of steamed broccoli
(batchcook; BC) Tuna patties with cucumber salad and potato salad
1 fruit before ea meal

Sat Aug 6 repeat Wed:
BC Blueberry cinnamon oatmeal and boiled eggs
Homemade chicken soup w/grilled cheese or veggie side
CP BBQ beef from freezer on bun, CP baked beans from dried, & homemade potato salad

Souper Sun Aug 7:
BC Breakfast burritos with freezer ham, canned green chilies, onions, stockpiled salsa
CP Soup: Smoked sausage, cabbage, stockpiled canned tomatoes, and red beans cooked from scratch (to use up sausage I'll never buy again). With baked cornbread to use up pkged mix I'll never buy again.

Mexican Mon Aug 8:
Homemade egg McMuffins
Freezer Enchiladas, leftover Spanish rice, green salad

I have Chinese Beef Noodle Soup to make for a friend, from freezer chuck roast and pantry noodles; and I am having soft chicken tacos at a friend's house one day with all the fixings; so I'll have to work those in and move things around. That's okay as I'm flexible.

Sunday: off to a family reunion so just need to plan what we are bringing to share.

Yesterday I inventoried the fridge in prep of doing a menu plan. I threw out some of the crockpot lasagna that was several weeks old. I had eaten alot of it but it was never very good to begin with. In addition to not having room to freeze it, I didn't want to (very unusual for me).

Was supposed to inventory the freezer too, for menu planning; didn't happen so freezer went on today's list. Today it didn't happen. I might still do it before midnight. So I'm a little behind on menu plan.

Wow it's best never to get lax on healthy habits; even the simple ones are sometimes hard to pick up again. Or harder than you'd think.

So here's another penciled in menu:

MON: Breakfast for supper; bacon, eggs, homemade breaded cube steak, and homemade not instant oatmeal. It was exactly what I was wanting and I felt like a Queen, how something so simple could taste 5 star is beyond me.

TUE: Crockpot BBQ Beef from freezer, on hamburger bun, with a side of cucumber salad.

WED: Crockpot bean & ham soup, it was from the freezer. With a side of Israeli salad. The soup was really good; I love hot soup year around.

Lunches & Dinners Ideas:
Frozen crockpot BBQ beef for sands
Frozen crockpot soup, several kinds in freezer
Salad with frozen grilled chicken breast
Beef nachos with guacamole
Hamburgers
Homemade baked jalapeno poppers stuffed w/chicken and cheese

This is great! I will replace this post with my menu plan! I always come home at the end of the day and say "what now?" and I almost never want to make something from scratch after a long day at work!

I am eating alot of leftovers, and took stock of the freezer - I have alot of stuff I need to use up.

But I did make tabbouli salad, Israeli salad, guacamole, and broccoli salad. That and leftovers got me through these 10 days. Today I ate veggie beef soup, previously cooked in crock pot;

Monday Lunch: BLT's (Ended up at Culvers instead)

Boy do I need this challenge. Before I moved I used up as much as possible, without planning.

After I moved every day was survival mode, cooking whatever and eating leftovers and using up as much as possible.

Last week it occurred to me I'm getting suboptimal nutrition and water since I moved; and I need to put first things first, and get back on the menu planning wagon. It's been 2-3 months since I REALLY menu-planned.

Right now I have leftover crockpot lasagna in the fridge. And I knew I had a chuck steak/roast in the freezer that needed used up, so I bought some potatoes, carrots, and celery to put in the crockpot. And I did batchcook some groundbeef.

I will come back with real menu plan later, my goal is to make a 10-day menu plan; here's my pencil in version:

Lunches:
Frozen crockpot BBQ beef sands, cucumber salad or Israeli salad
Frozen crockpot soup, several kinds in freezer, check freezer
Salad with frozen grilled chicken breast
Nachos with guacamole
Hamburgers, leftover, with cucumber salad or Israeli salad

Dinners:
Crockpot lasagna, leftover, cucumber salad, need to make tabouli
Chili, to use 1/2 of leftover ground beef, need to make green salad
Buffalo chicken, leftover, serve over rice, need to find a sale on broccoli or kale
Crockpot lasagna, leftover, cucumber salad, need to make Israeli salad
Crockpot roast & veggies, need to make green salad
Pasta or spaghetti, to use remaining 1/2 of leftover ground beef, need to make green salad
