I bought celery today for this, already have everything else.
I am moving and need to use up all perishables. So I have some Easter ham cubed & frozen to use up, and have some roasted chicken cubed and frozen to use up.
I've never put potatoes in my split pea soup so I will omit that, and add the ham and/or chicken.
Also something really wonderful in split pea soup is smoked turkey parts. Drums, wings, necks, tails, etc. If you've never tried it, I highly recommend smoked turkey in split pea soup, and, smoked turkey in collards. (For omnivores of course; sorry you veggies.) My mouth was watering for smoked turkey but the smallest package I could find was $5, like everything else it's really gone up. So I put it back and got the $1.49 lb chicken breast that was on my list, instead; and in the soup I will use up the frozen ham & chicken that need to be used up, instead. I can add liquid smoke.
Ingredients 6 cups water 2 carrots, grated 1 cup celery, chopped 1 cup split peas, dry 1/4 tsp parsley, dried 1/4 tsp garlic powder 2 potatoes, diced 1/2 onion, diced Normally I would use diced ham, today I didn't have any so I used 2 chicken drumsticks, breaded and precooked.
Directions Place all ingredients in the slow cooker. Set on low and cook for 8 hours.
