Egg-White Crepes
Prep Time: 10 Minutes
Cook Time: 5 Minutes
Ready In: 15 Minutes
Yields: 2 servings


INGREDIENTS:
1/2 cup whole wheat flour
2 egg whites
1/2 cup skim milk
1 pinch salt
1 tablespoon vegetable oil
1/2 cup mixed frozen berries, thawed and drained
1 tablespoon confectioners' sugar for dusting

DIRECTIONS:
1. Whisk together the wheat flour, egg whites, milk, salt, and oil in a large bowl until smooth.
2. Lightly coat a skillet with cooking spray and place over medium heat. Pour 1/4 cup of the batter into the skillet. Tilt the pan in a circular motion to allow the batter to spread to the edges. Cook until the bottom is light brown, about 2 minutes. Flip the crepe and place 2 tablespoons of the mixed berries in the center of the crepe; cook another 2 minutes. Fold the crepe in half and remove with a spatula to a serving plate. Dust with confectioners' sugar and serve.

Peanut Butter Crepes

1 large egg
5 egg whites
1 Tablespoon Splenda (or sugar or another sweetener)
2 Tablespoons peanut butter

Combine ingredients in a blender or with a mixer in a bowl. Lightly coat a skillet with spray-on oil and heat on high. Pour half the mixture onto the skillet, swirling the pan around to coat the entire skillet in the egg mixture. Once the mixture is starting to thicken, flip it over and cook the other side. Remove from pan. Repeat for the rest of the mixture.

Whole Wheat Blueberry Pancakes
Prep Time: 5 Minutes
Cook Time: 8 Minutes
Ready In: 13 Minutes
Yields: 5 servings

INGREDIENTS:

1 1/4 cups whole wheat flour
2 teaspoons baking powder
1 egg
1 cup milk, plus more if necessary
1/2 teaspoon salt
1 tablespoon artificial sweetener
1/2 cup blueberries

DIRECTIONS:
1. Sift together flour and baking powder, set aside. Beat together the egg, milk, salt and artificial sweetener in a bowl. Stir in flour until just moistened, add blueberries, and stir to incorporate.
2. Preheat a heavy-bottomed skillet over medium heat, and spray with cooking spray. Pour approximately 1/4 cup of the batter into the pan for each pancake. Cook until bubbly, about 1 1/2 minutes. Turn, and continue cooking until golden brown.

Mango barley porridge with blackberries


1 cup pearl barley
2 1/2 cups water
2 cups mango juice, room temperature
6 green cardamom pods
1/2 teaspoon sea salt
1 tablespoon honey
1 large red mango, peeled and chopped
1/4 pint blackberries

Rinse the barley and soak overnight in 2 1/2 cups water in a medium saucepan. Bring to a boil, then reduce the heat to its lowest setting and cover. Simmer, stirring every 10 minutes or so, for 45 minutes.

Stir in 1 cup of the mango juice. Put the cardamom pods in a tea ball and add to the saucepan along with the salt. Cover, and continue to simmer, stirring every 10 minutes as before.

After 20 and 40 minutes, stir in another cup portion of the mango juice, while continuing to stir every 10 minutes. When the last portion of the mango juice has cooked in the barley for 20 minutes, you should end up with a thick, but not too thick porridge. Remove the tea ball and stir in the honey and chopped mango. Simmer for 5 minutes.

Serve hot or at room temperature, topped with fresh blackberries. Serves 4 - 6.

Yup it is an alternative to oatmeal. Ever have rice for breakfast? I grew up eating rice and eggs or rice with milk, sugar and cinnamon. Now I use wild rice or do alternative grains, such as the quinoa.

Warm and Nutty Cinnamon Quinoa

A few notes and tips from the book: low-fat soy milk may replace the low fat milk, blueberries may replace the blackberries, dark honey may replace the agave nectar, and walnuts may replace the pecans.

1 cup organic 1% low fat milk
1 cup water
1 cup organic quinoa, (hs note: rinse quinoa)
2 cups fresh blackberries, organic preferred
1/2 teaspoon ground cinnamon
1/3 cup chopped pecans, toasted*
4 teaspoons organic agave nectar, such as Madhava brand

Combine milk, water and quinoa in a medium saucepan. Bring to a boil over high heat. Reduce heat to medium-low; cover and simmer 15 minutes or until most of the liquid is absorbed. Turn off heat; let stand covered 5 minutes. Stir in blackberries and cinnamon; transfer to four bowls and top with pecans. Drizzle 1 teaspoon agave nectar over each serving.

Serves 4.

*While the quinoa cooks, roast the pecans in a 350F degree toaster oven for 5 to 6 minutes or in a dry skillet over medium heat for about 3 minutes.
