Better than Pico De Gallo
1 medium onion minced
2 cans black beans drained
1 bag frozen white corn(thawed)
4 medium vine ripened tomatoes diced
2T lime juice
2T minced cilantro
2T olive oil
mix all ingridents in a bowl, let set for two hours before serving(it tastes better the longer it sits!)
This keeps well for at least a week.
My family eats it with tortillia chips, on salads and I even make burritos with it!
