I make a dish almost exactly like Linda's recipe on this thread, except I toss it with a box of Near East prepared couscous and serve room temperature to turn it into a meal for lunch.

Linda's recipe (w/ or w/o couscous!) is not only a great way to enjoy black beans, but it's a beautiful and healthy lunch or snack in hot weather.

I mix black beans and a can of chili beans when I make chili, for more variety. Again, This doesn't have to be all meat. A couple ounces per person is enough. If you need to extend it further.....serve it Cincinnati style over spaghetti.

I have a supply of 15 dried soup bean mix. [Angel Food Ministry have a bag in the box every other month if not more often.] I tried making a summer bean salad out of it....but it wasn't my favorite. I put Newman's own lite dressing on it with onions and celery.

Now that Fall is here, I will soak a cup of the soup beans in water over night, then add them to my crockpot with mixed vegetables, a can of stewed or dice tomatoes, and often a small amount of beef.

I will buy a chuck steak on sale and cut it up before freezing it. I figure that we don't need more than 2 ounces per person with the beans.

I also make a layered enchilada casserole with alternating layers of chicken and black beans.
If U want that I can post it later.

Better than Pico De Gallo

1 medium onion minced
2 cans black beans drained
1 bag frozen white corn(thawed)
4 medium vine ripened tomatoes diced
2T lime juice
2T minced cilantro
1t salt
1/2t pepper
2T cumin
1t garlic
2T olive oil

mix all ingridents in a bowl, let set for two hours before serving(it tastes better the longer it sits!)
This keeps well for at least a week.
My family eats it with tortillia chips, on salads and I even make burritos with it!
