Bob's right, you don't HAVE to eat at bedtime... it's kind of up to you and your body. What I do is test at bedtime, and if its below a certain reading, I'll have a snack. If not, I don't.
The snacks the others have mentioned are all good. I like cottage cheese, it has a few carbs in it as well as protein. Sometimes I'll add a bread stick or sometimes I'll just have half a sandwich--any combination of protein and carbs, where the carbs are 15g or less. I've had a half-cup of chicken soup, even, when I wanted something warm.
Use your imagination, just keep the carb count 15g or so, and you'll do fine.
Keep experimenting, and let us know what you find that works for you... 'cause we like trying new things too!
