Getting enough protein is an on going dilemma. I use Vega, or Sun Warrior protein for breakfast, I sometimes use a Vega after workout protein drink, too. I worked for them for a short time and have a little stash.
We have chickens where I live so I do eat a few eggs a week, not sure if I will after I move. I eat beans, and nuts every day, seitan, and quinoa. I have to watch the quantities of nuts carefully as the calories add up. I eat the very occasional piece of fish, usually when I'm home in RI.
I've worked in the natural food industry for over 30 years, so I'm very well trained in natural food prep and nutrition, as well as herbs and aromatherapy.
I'd love to hear what other folks do.
