So far today: grapefruit, raisins, tomatoes, onions, yellow squash, fresh beets and sweet corn. And I haven't even had supper...doing much better. Can't decide on peaches or watermelon for dessert...maybe both. LOL

Going to start this; committing to 5 days for first stretch. Today's plan:

Bfast - Nectarine with p/butter toast
Lunch - cabbage/carrot/lettuce/almond salad w/oriental dressing, and apple
Snack - Cottage cheese with banana
Dinner - hummus w/rice crackers and sliced bell peppers, and pineapple

Loves smoothies -- have fresh spinach and frozen berries ready for tomorrow

Wow. I wish I cold get into smoothies! 4 cups of spinach?

Today I had I "naked" taco salad that was probably at least 3 servings of veggies - 2 cups lettuce and at least 1/2 cup grilled veggies and salsa. With dinner I had about 2 cups steamed kale. No fruits today though - although I might have a banana for a snack later if I get hungry.

My spinach smoothies usually put me right on track, but today I've been enjoying the fresh fruit that's just come into season as well.

Breakfast had:
- 1 cup frozen mixed berries
- 4 cups of spinach
- 1 banana

Lunch was:
- 1 cup of kale (in a salad)
- 1.5 cups of raspberries
- 1/2 cup of strawberries

Supper: I'm going to have more of my kale salad with dill dressing.

this is one thing that is never a problem - either we have a salad or a soup that is filled with veggies. fruit takes a bit more thinking, but with blueberries for breakfast every day, and fruit for dessert at lunch and during snack, usually we fit them in fine. bought the first local cherries of the season, and peaches and nectarines, so we're clearly moving out of the "apple and orange" season.

How has everyone been doing? I haven't tracked the last couple of days due to unexpected events, but I probably came up a bit short. I did try to sneak in a few fruits and veggies, but I don't have much on hand for snacks now.

8 fruits and veggies yesterday! Aided by the banana "soft serve" I made for dessert. I should have that more often.

I bought some red kale yesterday and made kale chips. I'll have to come up with another way to use it today, although I could just make more kale chips as they are delicious. Anyone else have creative suggestions for kale?

Haha - that sounds ambitious streetwalker01! I'm sure there are fruits and veggies out there that I haven't even heard of.

I did try a red banana today. It pretty much tasted like a yellow one. ;) I also had a big apple with dinner, and had my risotto on a bed of chopped kale. I love kale so much, but sometimes I have a hard time using up a whole bunch of it. I think I'm going to try dinner on a bed of kale more often. emoticon

There are so many fruits in season so I'm really enjoying them as snacks during the day, As for vegetables I have been eating zucchini, green beans, eggplant, cucumbers, carrots, spinach, celery, asparagus, cauliflower, brussels sprouts - mostly steamed or roasted in the oven with olive oil and a little salt. These are all veggies that I like, but there are so many that I don't eat or have never tried. So my plan is to try a new one each week. Eating more fruits and vegetable has really been helpful with my diet because they are so filling and they satisfy my need to chew.

My goal in the next year is to have eaten every type of fruit and vegetable on the planet. haha emoticon

How is everyone doing with fruits and veggies? I didn't keep track yesterday, as I was at a party for most of the day, but there were tons of fruits and veggies available and I ate lots of them. Today I enjoyed fresh strawberries on my cereal and salad, and a bunch of fresh veggies with dinner. I also had leftover roasted veggies with some bread for lunch. I haven't tallied it up, but I'd bet I'm close to 9 today. I hope I can keep it up!

I do the same kind of weekend planning for suppers, looking at recipes and making menus and grocery list for the week. And that DOES help. I need to do better for my other meals, especially lunch where I tend to just eat a quick bean burrito or sandwich at work. Need to do that cutting and cleaning of veggies to get the 5-9 a day in.

My planning consists of taking some time on the weekend to plan meals, look at recipes and make a grocery list. If I am able to get all the supplies ahead of time and do some cutting/ cleaning of veggies on the weekend, then during the week I will make healthy meals when I get home from work. Also when I have healthy snacks to take to work, I won't eat the sweets at work.

That's a good point - what kind of things do you like to do to plan ahead?

I think I'm up to 6 total servings today, although that might be on the low side. I had a big taco salad for dinner, which was delicious - black beans, salsa, diced tomatoes, green onions, black olives, and lots of lettuce. It did come with a few tortilla chips to balance things out. emoticon

I will join you. I've been trying to improve my intake of fruits and veggies - some days are good and other days not so good. I'm learning that planning and preparation are everything. If I don't plan ahead and I have a hectic day, I eat poorly. Rose

I managed to get 7 servings yesterday -- but I think 5 of those were fruit. I think I tend to go in spurts. I don't go grocery shopping frequently enough to keep all sorts of fresh fruits and veggies on hand, and I have trouble remembering to eat frozen, canned, and dried fruits and veggies.

I keep thinking it would be helpful to get in a couple of servings at breakfast, but I don't want to do smoothies and I often end up short on time in the morning. I'm thinking I could prepare some fruit the night before to mix in with my cereal. Any other ideas?

I'm in. I am on the road a lot with very odd hours. I've been trying to make smoothies to take with and pack in an ice chest. Also big salads. But those days where I don't have my act together are the big challenge!

that fruit salad is a nice idea, boni! veggies are never a problem when following E2L - we have a huge salad and/or soup daily, and i never make a main dish without some major veggies in it.

but fruits we have to work on a bit - usually we get a minimum of 3, i have blueberries in a soy yogurt breakfast, and orange either with breakfast or after lunch, and DH usually cuts up melon (cantaloupe and/or watermelon) for desert of snack.

I used to have the problem of not getting enough fruits. I now make a huge rainbow fruit salad on the weekend and eat it for a few days. Fruit in smoothies helps too.

Some days are harder than others. Today i was traveling for 9 hours in my car and it was difficult to have as many fruits and veggies as i would have liked. So i only got 5 veggies and no fruits. I did have too many grains and the fruit at the grocery store just didn't look good.

But tomorrow is another day. I would love to join you in this goal. Should we come back each day for the rest of the month and post how we did?

Who wants to join me in aiming for 5-9 servings of fruits and veggies per day? You'd think as vegetarians this would be easy to do, but I often tend to eat too many refined grains and not enough fruits and veggies. Anyone else have this problem?
