Canned asparagus is awful. I only eat the fresh stuff - which means it's very seasonal (it's only available in spring here).
Top 3 ways to eat asparagus:
1. Slice the stems into pieces 1-2 inches long and include in a stir fry. Get rid of the bottom 2 inches - it's usually woody and not that nice.
2. Steam it very lightly (or microwave it) - it should still be almost crisp - and eat it with hollandaise sauce (for a vegan substitute, use vegan mayonnaise with 2 tsp of unsweetened orange or lemon juice mixed through) - eat it as a side with anything else that goes well with hollandaise-type sauces eg buckwheat, kale and black beans
3. Roast it in a hot oven (400 degrees F) for 20-30 minutes and serve with a squeeze of lemon juice as a side with whatever else you're having.
If you eat eggs, it also goes really well in quiche, or you can use steamed asparagus as a filling for omlette.

I oven roasted my asparagus and it was great with seasonings and evoo! But I find that of course the fresh stays firmer...I tried the canned the first time and it was good but a bit mushy...so fresh is better in that case to me :)

i'm wanting to try asparagus. i've eaten it before but only in other foods and only in restaurants. i'm eager to try cooking it at home for the first time, but have felt overwhelmed because i don't want it mushy. anyone have a favorite way to enjoy asparagus at home?
