I just chop everything up. Put it all in a pan with a little oil and water. Cover and simmer until it all softens a little. Then take the cover off and cook until it looks done. (If you want the potato more firm than soft then add it in after the onion and apple have softened up a little.)

I love to make "naked spaghetti". I'm not a huge tomato fan so I will often serve my pasta with no sauce. I cook the pasta as usual. While it is cooking I saute some veggies in a pan--onion, mushroom, bell pepper, etc. Maybe I'll put some tofu in the pan too. When the veggies are just about done I add the pasta to the pan, sprinkle on Italian seasoning and fry it up for a few minutes.
I also love to saute potato, onion and apple for a side dish. Very yummy!

Easy veggie stir-fry with brown rice. For some extra protein, I've added black beans and tofu as well.
Tacos w/ grilled portobella mushrooms, cut into strips, and taco seasoning or good just plain or with lime juice. I like using soft corn tortillas and serving with grilled onion and peppers as well. Serve with black beans on the side.
Pasta with pesto. I make a healthier pesto by using spinach with a little basil, toasted pine nuts or walnuts, and just a little olive oil. Use the pasta water to get the right consitency instead of oil. If your family likes tofu, I usually saute some on the side and then mix it in with the pasta and pesto.
