For breakfast I had clean whole wheat bread (1 slice) with clean PB, flaxseed meal (1tbsp each), and 0.5 tbsp on just fruit jam. Along with that I had 3 egg whites, 0.5 yokes and a dash of sea salt. That is a yummy and filling breakfast.

That's sounds like a great idea for cooking the eggplant. Years ago, my mother would dip in egg and breadcrumbs and then fry it. It would absorb so much oil and we didn't use olive oil then either. It was really good tasting but could not have been good for us considering all the calories and fat.

Made a new experimental cooking recipe . . . Black beans, dash sea salt, dash sugar, chopped cilantro, tarragon vinegar, couple t. olive oil. Turned out great. Made the Crockpot Salsa Chicken recipe . . . definitely worth the time.
Great job everyone! I love that we're sharing our moments of success with the small daily choices here!Rather than the cookie I was tempted with at the deli I bought the raw omega 3 nut and cranberry combo. It was more filling and much healthier!
Just got my Clean Eating Magazine and it looks great. Sent Hubby to store to get ingredients for the Clean Mac & Cheese recipe. What a scavenger hunt. Couldn't find Whole Wheat Panko, the right cheese . . . it is a nutritional disaster this time. Too much sodium in cheese. I just need to go to whole foods to shop but is so much further away. Anyone made any of the other recipes??
I love to make eggplant parmesean 1X a month. Using olive oil on a griddle makes the eggplant come out so tender and juicy. Bake with some home made or jarred organic tomato sauce and maybe alittle cheese with a side salad. mmmmmmmmmmmmmmmmmmmm

not really a recipe, but I've been loving my apple and raw almond butter combo lately. Such a great after workout snack. As far as dinner, my fave has been a whole wheat lasagna "roll-up". I cooked the noodle, made a mixture of low fat ricotta, 1 egg white, spinach, and low fat mozzarella - and rolled it up in the noodle. Covered it in a ground turkey tomato sauce, more mozzarella, and baked! SO good!

I've been on a cooking binge. Food network has me inspired. Breakfast was whole grain tortilla with 2 egg whites scrambles with about 1/8th cup each, black beans, mushrooms, tomatoes, onions. Add a touch (.5oz) of fat free feta, half a jalapeno, bunch of fresh cilantro, pinch of sea sat and fresh pepper. Yum, all under 300 calories. Lunch is a plain ol' spinach salad with hard boiled egg whites, diced tomatoes, and carrot shavings(I did make a yummy dressing with a splash of EVOO, rice vinegar, clementine zest and juice, and a touch of ailoi mustard.) I think my boring choices for food in my past clean eating attempts have been my downfall. I'm, trying to be more creative and use more ingredients, herbs, and spices this time!
Do you eat the whole seed, or just suck the fruit off the seed? I do the latter. I figure it takes a lot longer to do it that way, so the fruit last a LONG time! I can't possibly eat too much too fast! But it is pretty messy...
