I've been on a cooking binge. Food network has me inspired. Breakfast was whole grain tortilla with 2 egg whites scrambles with about 1/8th cup each, black beans, mushrooms, tomatoes, onions. Add a touch (.5oz) of fat free feta, half a jalapeno, bunch of fresh cilantro, pinch of sea sat and fresh pepper. Yum, all under 300 calories.
Lunch is a plain ol' spinach salad with hard boiled egg whites, diced tomatoes, and carrot shavings(I did make a yummy dressing with a splash of EVOO, rice vinegar, clementine zest and juice, and a touch of ailoi mustard.)
I think my boring choices for food in my past clean eating attempts have been my downfall. I'm, trying to be more creative and use more ingredients, herbs, and spices this time!
