Threw this together last night. Had to use food up in the fridge. Turned out really good!
1 Tbsp olive oil
1 can mushrooms or fresh
2 thick slices onion, diced
1 zucchini sliced and diced
1/2 cup chicken broth
1/2 cup diced ham
Dash Italian seasoning
1 tsp minced garlic
Saute veggies in pan with olive oil. Add chicken broth, ham and seasonings. Cook on low with a lid, about 10-15 or so.
Serve over pasta of your choice.
