I love to drizzle cauliflower with olive oil, sprinkle it with a generous amount of Mrs. Dash (Original Flavor), and roast it in the oven or toaster oven. Yum!

We harvested a huge amount of small, thin sweet peppers, and we've been stuffing them with a tablespoon of cream cheese (actually neufachetel sp?) and chopped veggies. We are going to try stuffing them with fat free refried beans tomorrow. Yum!

Yum! YUM!

It is a significant amount of protein.

1/2 cup = 1 Dairy
1 cup = 1 protein

So, if I am low on protein for the day, I eat cottage cheese and feel like I'm cheating on my dairy...

Sautee chopped onion and garlic, add one cup already cooked brown rice, wilt one cup of spinach on top, then sprinkle a tablespoon or two of parmesan or feta. Fast, healthy, and yummy!

I love eating 1/2 cup vanilla yogurt with 1/4 cup lowfat granola for breakfast. Just enough fat and protein to keep me going, and enough carbs and crunch to satisfy me. Some people add fruit, too, but I don't care for fruit in my yogurt.

Sounds very interesting Karen! I just may have to try that!

Lately... I have been REALLY busy and really taxed for time... so I have been relying on fast food a little more than normal. But, I have been scanning fast food joints for the healthiest options... and I am very impressed, actually, with the options their are for healthy choices!

One example;

Wendy's - I order the Grilled Chicken Ceaser Salad, no croutons or dressing! They don't add bacon, and they do add cherry tomatoes... and perhaps a bit too much fresh parmesean... but SUPER GOOD! And healthy! They give you tons of romain lettuce too, so I save it and make a salad with it the next day at home.

My kids are happy, because they are getting a treat... and I ain't ruining my diet!

WIN/WIN

P.S.
When I say 'diet', I don't mean the next fad I am working on, I mean the food that consists of my body's dietary needs!

I love apples! I eat one almost every day.

I love roasted cabbage. I cut the cabbage in half, then cut those halves into thirds. Then I drizzle each chunk with olive oil and sprinkle with sea salt and pepper. (My daughter adds about a half a pat of butter to each, as well, but I'm trying to cut back on cholesterol.) I wrap each of them in foil and put all of the packets on a cookie sheet. Then I bake them for 45 minutes in a 400 degree oven. Yum!

Right now... I am trying to see how creative I can get with a prepared mixed cabbage and carrot mixture. I have made a sweet salad once, and I think I am going to go and make tuna salad with it... may be interesting!

Never tried pomogranite seeds. Have to change that!

My favorite healthy food recently is an omelette with onions, peppers, garlic and parmesan cheese. I use two eggs, but only one yolk. It's higher in protein than my usual breakfast, and I can squeeze in some veggies early in the day.

That is sooooo funny Karen! I am the same way about blueberries! And I keep trying them too... but I just don't love them! I will eat them... and they are okay in muffins, although I hardly touch muffins these days... but... yah... never ever really had much of a desire for blueberries!

Tried this last night! So YUMMY!

One hard boiled egg/halved!

2 tbsps measured, Sabra Roasted Red Pepper Hummas (COSTCO)!

Take 1 tbsp, lightly spread over halved egg, and ENJOY!

Oh my YUMMY!!!

I felt like I was having like a surprise spread full of cream cheese, cheese, more cheese, sourcream, and a few veggies...

YAH!

Sounds great MOUNTALUM!

Spinach feta egg wraps from Starbucks... those are my weakness... but they aren't bad for you!

I am getting a starch from the wrap, 1/2 protein from the egg, 1/4 dairy from the feta... although I shouldn't be eating the feta when trying to loose weight, to high in salt... I DON'T CARE... lol! It's a fat too... and they taste good, in my mind! This prevents me from falling weak to more high fat/starchy breakfast outlets like McDonalds or A&W, or even some of the other options of Starbucks!

I've been obsessed lately with low cal Caesar salads. My fiance made it with dinner the other week and I've literally made one for myself every night since. What makes it good is the dressing -- Ken's lite creamy Caesar. It's 90 calories. It's really the dressing that I crave. So good! I've also been drinking lemon water like a fiend for the past three weeks. Love it!

I found these whole wheat tortillas that I love. They're made by Buena Vida, and have 3 grams of protein, and only 7 carb grams. I use them for veggie wraps, and even with eggs for burittos.

I do love costco for fruits and veggies. I buy the giant container of spring mix salad and organic spinach there. It's so cheap and makes a ton of dinner and lunch salads, too! That is where I get all of my fresh strawberries in the summer. I can go through one a week.

I just bought this HUGE jar from Costco of pickled beans! So yummy!!!

Green beans, yellow beans, kidney beans, and chick peas! IT really is a sweet and sour pickling... but just dang yummy! For me anyways... lol!

Apparently I am into pickled things lately... lol!

I love strawberries too! Costco has these really big bags of frozen strawberries... absolutely great and fresh as they can be, considering they are frozen... you can still see the true shape of the strawberrie, as if it was just plucked and beheaded of it's stem... Costco has the best fresh strawberries when they are in season! Heck... obviously I love Costco! They really have great fresh produce!

Pickled Eggs are on my priority grocery shopping list these days!

I have one everytime I come home from the gym! Gives me what I need to get through till lunch, and well... I have always loved them... something I shared with me dad!

I am coming to the conclusion that clementines are what we call Christmas or Chinese Oranges!

Yah.. I fall into the rut of eating the same thing over and over, and notice that it affects my weightloss! Actually, Herbal Magic warns you of this, and gives recommended times allowed per week, now that I think about it!

New favorite!

Egg Creations! I have used these before, but I just recently tried their Garden Vegetable one, and I really like it!!! It's perfect for omeletes, or denver style egg sandwiches, and it's quick and convenient when you are short on time, or really, really hungry, and don't want to spend a ton of time preparing food! Life saver for falling weak to take out!

Clementines! Clementines! I keep hearing and reading about Clementines! I have never heard of them before until recently, now it's all I hear! I don't even know what one looks like... lol Must do a search!

I also love clementines. 45 calories, easy to peel and delicious. Too bad I just ran out.

I get my trail mix from Sam's for 7 something, but since I measure it, it's 44 servings. Almonds, giant cashews, peanuts, raisins, and real m&ms - heaven! I try to eat a piece or two at a time so I don't scarf it down. Food is a lot better when you actually taste it, isn't it?

I think you a clever... lol! I definitely got carried away with this trail mix I found at the Co-op over Christmas...but loved it... I think I will buy it again, but put it in little tupperware containers! Thanks for a great idea!

Sounds great, Ducky! I'll have to try that. And I'd be way more likely to buy yogurt than ice cream.

I love trail mix. I eat it most days for my mid-morning snack. It's got enough fat, calories and protein to tide me over until lunch, plus it satisfies my sweet tooth. I have to be careful with portions sizes, so I eat it out of a 1/4 cup measuring cup. DH thinks I'm nuts!

This morning I made all of us girls a treat, inspired by a recipe here at spark!

I think it's titled Missing Apple Pie?

1 serving is:

*2 apples, cored, peeled and cubed...
*sprinkled with splenda and cinnamon...
I just realized I forgot the splenda, and it still tasted great... lol! Whoops!
*2 tbsp water
*1 portion vanilla yogurt
She suggested low cal vanilla icecream, but we were having it for breakfast, so we used the yogurt instead.

Bake the apples in the oven at 350F for 30-40 minutes!

Add yogurt after, and I gave my girls each a cheesestring to eat with it!

THEY WERE SO EXCITED and HAPPY!

DELISH!

And this way, you aren't getting more starch and sugar etc. from the pie crust, but still fill your home and tastebuds with the aroma and satisfaction of apple pie!

Those both sound yummy.

My favorite thing to eat is totally simple. Cucumbers. Cucumbers alone or in a salad. Or cucumbers with a little onion, a bit of sour cream & balsamic vinegar. I really just like cucumbers. Kinda silly, huh. emoticon

That sounds like a great idea! Infact, I have been trying to figure out healthier ways to eat pasta other than my family's favorite spaghetti with meatsauce. Tomato sauce is full of sugar! I've never been to big on olives... but my appetites been maturing again, I will give them another try!

That sounds delish, Ducky!!

I like to saute diced onions and bell peppers in olive or canola oil, and when the onions are carmelized, add sliced black olives and minced garlic. Then I throw the whole thing over whole wheat pasta. Add a tiny bit of salt and fresh pepper and eat! Yummy!

My favorite thing to eat right now is:

Veggie Chicken Wraps!

The BEST thing I could have done, was buy myself one of those rotisserie birds from Superstore! I have been plucking away at that thing for 3 days now, and I still ain't sick of it!

INGREDIENTS:

* One 6 inch Weight Watchers Whole Wheat Tortilla
* 1 tbsp Dijon Mustard - spread across tortilla
* 1/2 oz Tex Mex shredded cheese - sprinkle evenly
* 2 oz Rotisserie Chicken - sliced, skinless
* Desired amount of Fresh Baby Leaf Spinach
* 2 or 3 grape tomatoes - sliced in half
* 1/2 a baby cuke, or desired amount of any kind

Have extra cuke slices on the side, or whatever your HEALTHY HEART desires!
