I found this receipe and thought that I would share it.

Carrot Muffins

INGREDIENTS
1/2 cup of cottage cheese
1 cup of grated carrots
1/2 cup of Splenda
1 cup of oats
8 egg whites
1/3 cup of applesauce
2 teaspoons of baking powder
2 tablespoons of vanilla extract
3 teaspoons of cinnamon
DIRECTIONS
1. Mix all ingredients except for carrots and applesauce.
2. Now gently fold in carrots and applesauce into the mix.
3. Spoon batter into muffin pan and bake for thirty minutes at 375 degrees.
This should make about twelve or so muffins.

Lately its been a microwaved baked potato topped with lite cottage cheese and a alot of steamed veggies on the side with vinegar. Or lots of salads with chicken I cook up the night before..actually I do some prep after Nora is in bed. Most days at least one of my meals is greek yogurt with fruit and nuts, so quick and easy and I can make it and eat it with one hand :)

With my wonderful baby I cant find time to cook lol.

Ive been doing protein shakes and a fruit for lunch. Best advice I have is to do all your cooking on the weekend. We grill a ton of chicken and then keep it in the fridge for the week to have to put on salads or tacos or in whatever. I also plan my lunch for the week and cook what I can, like a turkey burger. we eat a lot of salads for dinner its quick and easy and no cooking

Have you tries overnight oatmeal? Old fashioned oats, coconut or almond milk, yougurt(I use Greek), chia seeds and some fruit of your choice! Some sweetener of choice also. Sometimes I omit the fruit and add a teaspoon of instant coffee. It's like a latte in a bowl! Or I make an oatmeal smoothie. Taking the same ingredients with a little water and some ice cubes I blend it so I get my whole grains in a smoothie!

Lunch is usually leftovers or a can of the low cal soups that are in the market and a BIG salad with fat free dressing. I make my own. 2 tbsp balsamic vinegar, tbsp lemon juice, tblsp Dijon mustard, tbsp water and a 1/4 tsp garlic powder. 2 tblsp has 20 calories.

Dinner is just low fat and low cal fare with TONS of veggies! Grilled, steamed or raw!

For breakfast I usually do a smoothie, scrambled eggs, or oatmeal.

Lunch I either have a Smart One dinner with added veggies, or a salad.

Dinner usually my husband cooks supper but I'm trying to get him to cook healthier b/c a lot of his dishes involve a lot of cheese or other fattening ingredients.

Snacks- fruit, veggies, craisins w/ almonds, plain yogurt w/ my own fruit mixed in, etc.

For breakfast I do lower sugar instant oatmeal, a frozen light mcmuffin sandwich, or a smoothie. I have a little smoothie maker that makes it simple. I usually add a fruit too.

Lunch I do simple stuff like lean cuisines, often adding some extra vegetables to bulk up the meal. I also do peanut butter and sugar free jelly (nut butters = healthy fats). Or if I didn't have a smoothie at breakfast I'll have one for lunch.

My husband also batch grills on the weekend, so we'll have leftover chicken and veg or beef and veg kebabs that easily reheat in the microwave.

Snacks are fruit, cheese, and nuts.

Wondering what kinds of foods/meals you all eat throughout the day? I really dont have time to cook healthy meals and I am looking for ideas
