Apples, Carrots, a Lemon or two, and Baby Spinach. They are the mainstays of my healthy eating plan. I am making Apple Cobbler/Crisp for the guys this evening. And my Blender Energy drink for me.
Blender Energy Recipe
1/2 apple, washed well and chopped, 1 carrot, washed, peeled, cut into 1/2 inch chunks 6 - 8 baby Spinach leaves, washed and chopped a little to release flavor and vitamins. Place all above in blender Juice of one Lemon or Orange, freshly squeezed Enough water to blend...about 1/4 to 1/2 cup
Mix well in blender. Pour into bowl and eat as porridge. Add water (about 8 ounces) Blend and pour into large glass. Drink.
[The blender is almost clean by this time and you probably have a little extra left-over for another boost of energy later on during your day] ENJOY!

I love fennel! Prefer it raw rather than cooked. To prepare it to be eaten raw is easy.
Cut the bulb from the stalk. Trim off outer damaged parts if any. Slice in half lengthwise and slice halves thinly.

There are several here are some of the things I do with the butternut squash. First of all, I don't peel it. Skin gets tender as it cooks and adds more nutrients to the finished dish. I scoop out the seeds and roast them and then finely grind them. Adds an interesting taste to foods.
I cut squash up and grill on a George Foreman grill. It comes out crispy, brown and very sweet. One of my favorites! I use it raw and shredded in salads. I cube it up and blanch before freezing. It can also be pureed before freezing. I find the pureed squash is a wonderful thickener for soups and sauces. Can you tell that it is one of my go to foods? You are right! Thanks for asking.

I knew that butternut squash would keep for a few weeks, but I envy you to get 6 on sale, and to be able to use them up. I'd do it, but hubby and son aren't so keen. Does it freeze well? Like from just cut up fresh. Or does it freeze well par cooked first?

Just for today I grilled the veggies purchased yesterday. Also, purchased six more butternut squash. They were on sale for $1.29 and weighed at least four pounds each. They will keep a very long time. Planning on enjoying them for weeks.

The bulk of grocery money is spent on fresh fruits and vegetables, then tofu, TVP, dried peas & beans and nutritional yeast.
Not a true vegetarian yet but working toward it.
I buy produce that looks fresh and cheap. It is like a game to me now. Have been creative in making up new combinations of foods in bulk and then portion control comes into play.

Thanks, Jenae. We do tend to eat quite a lot of vegetables for non-vegetarians!
This past weekend our fresh produce shopping was -
Bananas, bell peppers (red, green and yellow), cucumber, tomatoes, cherry tomatoes, savoy cabbage, red cabbage, courgette, aubergine, carrots, potatoes, sweet potatoes, turnip, brussels sprouts, broccoli.
Also frozen green beans, frozen broccoli and frozen peas.

DH and I were out yesterday - had to top up on sweet peppers, cucumber, tomatoes, bananas, courgette (zucchini) and aubergine (egg plant). And I got a bag of lovely big Brussels sprouts - most of which got eaten with the dinner tonight!! I looked at the big bags of onions and decided we had enough - came home to find we only had 1 left! At least I still had a couple of small red onions, and most of a bag of shallots. We'll be shopping for fresh produce again this coming Friday, all being well - Lidl and Costco.

Cauliflower, white cabbage, red cabbage, shallots, leeks, sweet potatoes, garlic, broccoli and tenderstem broccoli, asparagus, celery, turnip and snowball turnip (I think this might be swede and rutabaga, but not sure which is which), aubergine (egg plant), courgette (zucchini), bell peppers (green, red, yellow), vine tomatoes and baby plum tomatoes, baby corncobs, cucumber, baby gem lettuce, bananas, kiwi fruit, lemons, nectarines.
I think that covers the fresh produce for this week. Son's veg & egg breakfast, hubby's lunchtime soup, my first half of the day fruit, and the veg for our evening meals, supplemented by some frozen veg (this week, green beans and chopped spinach) and some dried fruits, but I haven't bought any this week as there's still plenty in the cupboard.

I bought a combination of broccoli, cauliflower, and baby carrots. Also bought several types of lettuce, plus cucumber, bananas, peaches, and apples. Also got lots of string beans from our garden!

I am considering a platter of melon and potatoes as produce, but then real produce was a 4 bean salad, fresh spinach, salsa, canned french cut green beans, yellow pepper, and tortellini from the deli with vegetables.
