I'm glad ur other half is doing good. Mine is slowly feeling better, thanks

I see what u mean about the batter, what I meant was I wanted to freeze some bread so I made extra batter cause I would be too busy to make it with him getting his teeth done. Hope that makes sense. :)

have a good Friday .

LOL! I was quoting what you wrote in your post..and wondering what wisdom teeth had to do with making the batter! (re-read your original post)

lol! Val, I love your post!
"we 've been eating it at breakfast and I won't be able to make the batter cause my hubby is having his wisdom teeth out." not sure what the wisdom teeth have to do with making the batter! :)

My recipe usually maks 2 loaves & I normally freeze one right away. I find that wrapping it in Saran Wrap, then foil seems to preserve it ok for awhile. I've never gotten ice crystals. I have never frozen the batter..but I would imagine it would be ok in the fridge for a few days also. If we are eating the current loaf slowly, it goes in the fridge.

Hi yeh I got the recipie from Spark -Low fat banana bread . It's so good !
And ur right it stays pretty good . I make it and it lasts for days .

Lately I was playing around and I put strawberries with a little sugar mixed in the strawberries. And a little whipped cream and a little shebert . The bread I cut up small and eat ! It's good, a healthy treat.

Thanks for sharing , I'm glad the kids like it , it's good for them too.

Glad to see this question posted, as I also made some yesterday for the first time in this lifetime. It is only myself, so I have extra bread left over and didn't know how to save it.

I left it in the fridge yesterday in tupperware, and it was still magically delicious this morning. I wonder how long it will last.

This type of bread seems like such a great treat for the kids.

Did you use the healthy recipe found on this site?

After you bake that extra batter, wrap the loaf in airtight plastic like zip-lock and make sure to press all the air out of the package. This will help prevent freezer burn.

Even then, don't leave it too long in the freezer as ice crystals could still form.

Put extra baked bread in the freezer. Extra batter should be baked off and then frozen.
