i used my crockpot yesterday to make my turkey stock from my carcass and veggies. today, i'll finish making the soup with leftover turkey, some of the succotash, carrots, celery, and maybe even some of the stuffing. haven't quite gotten fully focused on it yet.

I froze about 1/3 of the 23 lb turkey my DH got from his shop, but today I have some assorted turkey bits with about 2 cups of de-fatted broth, maybe 2 cups of stuffing & 1 leftover baked sweet potato in the crock. I've added 1 1/2 cups of beans, 1/2 lb frozen mixed veggies & a can of fat free chicken broth. We'll call it soup, but it's thick enough to put on rolls. YUM!!
