I don't think it has to one or the other. I freeze the turkey and gravy, but then use it to make turkey and dumplings in the crock pot.

i used my crockpot yesterday to make my turkey stock from my carcass and veggies. today, i'll finish making the soup with leftover turkey, some of the succotash, carrots, celery, and maybe even some of the stuffing. haven't quite gotten fully focused on it yet.

Tonight is chopped chicken, mixed veggies, cream of chicken soup dumped into a 9x13 pan topped with dressing. Baked for 30 min. at 350. I think that's going to wipe out my leftovers.

I froze about 1/3 of the 23 lb turkey my DH got from his shop, but today I have some assorted turkey bits with about 2 cups of de-fatted broth, maybe 2 cups of stuffing & 1 leftover baked sweet potato in the crock. I've added 1 1/2 cups of beans, 1/2 lb frozen mixed veggies & a can of fat free chicken broth. We'll call it soup, but it's thick enough to put on rolls. YUM!!

freezer and then use them to make a casserole my family loves. Make stuffing with lots of added onion and add leftover turkey and a little cubed Velveeta cheese.

Well, I have NO leftovers, however, always LOVED to make TURKEY soup with left over turkey. Use the left over veggies, and potatoes! YUM
