Here is one I just need to change a bit to make it crock pot friendly. Not ingredient changes, just directions. I'll post it the proper way but if you know your crockpot you will know what to do. I don't know how the dumplings would work. When I have seconda for a seperate day, I would add them then. You may need etra liquid for second's. I usally do
Beef Stew and Dumplings (courtesy of Mom – Noreen Snively)
1 lb stewing beef Flour for dredging 2 tbsp oil 3 cups water and 1 can of tomato soup, low sodium if possible ¼ cup of red wine or a few dashes Worcestershire sauce Salt and pepper to taste 2 carrots, sliced 2 – 3 stalks of celery diced coarsely 3 potatoes, peeled and cut into 1 inch cubes
Dredge meat with flour, shake off excess Brown in oil in a large pot. Add soup, water, salt and pepper, Cook over medium low heat 2-2 ½ hours (until the beef is tender) Add vegetables and cook for ½ hour
1 cup four 2 tsp baking powder ½ tsp salt
Mix the dry ingredients together Mix together ½ cup milk, 2 tbsp oil Combine with dry ingredients. With a tbsp divide into 4 – 6 mounds, add to stew and cook covered for 15 minutes (do not open lid in the interim)
Jenny that sounds SOOO good. My husband would hate it, he's weird, doesn't like veggies, beans, potatoes, only meat, cheese and rice. But, football season is getting ready to start, I will definitely have to make this.

I love the idea of cooking overnight to take for lunch the next day!
My favorite fast recipe - just dump into the crockpot (okay - that's assuming you have cooked ground beef in the freezer or some sort of leftover meat to use instead!) and run out the door. This would be great to take along for sports practice/games/whatever.
Santa Fe Stew
2 lbs browned, drained ground beef 3 cans hominy (white or yellow) 2 cans Ranch Style Beans (chile beans can be substituted if you gotta) 1 can stewed tomatoes (chopped) 1 cup chopped green chile ( I use canned for speed) 1/2 lb chopped Velveeta
Combine 1st 5 ingredients in crock pot and cook on low all day, approximately 8 hours. 1 hour before serving add cheese and stir several times throughout. Serve when cheese has melted. Serve this with hot tortillas or crackers or corn chips and a dollop of sour cream.

Tips to move it - 1. Start crockpot in the a.m. - grab it in the evening as you grab the kids and sport equipment, place crockpot in box or plastic crate, pad with blanket or newspaper. Serve each family member as their time permits.
I have 2 kids and am a single parent. We've used this concept with multiple scout meetings, soccer, dance, etc. One kid works on school work and visits with me while eating and the other kid is in activity - then we swap out for the other kid. Sometimes we ate at the lake or park for a warm fall picnic!
