I've not tried the recipe yet, but would be concerned about the higher water content in zucchini vs. eggplant. Tho' zucchini is fairly cheap right now so if you wanted to try it out and report back we would appreciate your efforts. I'm canning green beans right now or I would try it with zucchini.

Found this on another team thread: Eggplant slice it fairly thin, spray with olive oil Pam and put in oven at a fairly low temp. 200 -250 until they re crisp. Tasty potato chip equal. I also put garlic powder or garlic salt or pepper on them. Sometimes I do them better on the grill. Wonderful
