McCormick now makes a seasoning that says for Slow Cookers, I haven't tried it yet, but seeing this recipe I will make this week. It says you can cook it on low for 8 hours.

I do that all the time, make a big batch of something and all we have to do it reheat, makes life very easy during those months my son plays soccer and baseball, need easy meals those nights.

I LOVE big recipes...that means some for the freezer and a night or two that I don't have to cook, just reheat. ;0)

Baby steps will get you where you need to go. . .eventually...you just have to start out by taking the first step.

I let it simmer most of the day (2-3 hrs at the least). Yes, very big recipe, but I can freeze some and have some later in the week too. As stated, we get about 3 meals and are a family of 4, with the youngest being our 16 yr old son who is a bottomless pit when it comes to food.

I am not a bean fan - so when I make chili - I also add:

some kernel corn (drained if from a can)
pearl barley - soaked for a while first as it soaks up lots of water
shredded carrots - I get veggies in where I can

I use ground beef, but any ground meat such as turkey would work.

You can downsize this, I have always used a large pot for this one, most crockpots would only take about half of this.

1 - lb ground beef (browned)
1 med onion diced and cooked with beef
6 cans stewed tomatoes
6 cans kidney beans
1 pkg chili seasoning mix (I use mild)
extra chili spice to taste, as needed

Simply combine all ingredients, stir together and set on low.

We add grated cheese or oyster crakers when serving.
