I'm going to use a pork roast instead of beef, since that's what I've got today.

From Living on a Dime:

Slow Cooked Cranberry Roast*

1 (1 oz.) package dry onion soup mix
1 (3 lb.) chuck roast
1 (16 oz.) can jellied cranberry sauce

Pour onion soup mix into crock pot. Add roast and then put cranberry sauce on top of that. Cover and cook 8 hours on low. To thicken gravy, make a thin paste of 1 Tbsp. of cornstarch and water. Whisk into juices, turn on high and bring to a boil.

If you want, you can add some baby carrots and quartered potatoes during the last 4 hours of cooking.

Tex-Mex Beef Wraps From the Rival Crock-Pot Website;
Place one medium chopped onion, and 3 cloves minced garlic, in bottom of crock. Top with 2.5 - 3lbs chuck or pot roast, cut into 4 pieces. Rub the meat with (I didn't rub it, I just eyeballed it and sprinkled over the meat) the following spice blend: 1 tablespoon chili powder, 2 teaspoons ground cumin, 1/4 teaspoon ground red pepper (and I left out the salt). Spoon 1/2 cup salsa over meat (I used more salsa). Cover and cook on low 8-9 hours, or on high 3.5 to 4.5 hours.

Remove meat from crockpot, shred with 2 forks (I shredded it inside of the pot), skim off fat, return to meat to juices and mix well. Adjust seasonings. Place meat on warm tortillas; top with cheese, tomato, cilantro, avocado. Serve w/salsa.

Corned Beef Hash Recipe:

2 to 3 cups cut-up cooked beef, leftover roast or cooked stew beef

1 large package (about 32 ounces) frozen hash brown potatoes, thawed

1 cup finely chopped onion

1/4 cup butter, melted

1 1/2 cups leftover gravy

salt and pepper to taste.

Combine everything all at once, and cook on low for 6 hours.
It was really flavorful!

Here are my changes:

- 1.5 lbs of beef chuck stew instead of 3 lbs
- 1 cup of pearl barley instead of 1/2 cup
- 1 yellow onion & 1 red onion
- 6 cloves of garlic
- 1 tbsp of olive oil to brown/sear the beef
- no frozen veggies
- no bouillon cubes (I didn't have beef); I used 2 cups of mushroom broth & 2 cups of beef broth instead
- 1 cup of water

The differences are 100 less calories, 11g of fat less, only 2g of saturated fat and a bunch of other super good changes. I'm entirely happy with it and it's going into my regular rotation.

I made the best chili last night, with 93% ground beef I had bought extra of on sale, batch cooked & froze.

browned ground beef - didn't measure, probably 2Cups cooked
1 can each of pinto & red beans, rinsed & drained, 14.5 oz ea
1 large onion chopped
1 28oz can of whole tomatoes w/juice - chopped in my hand over the crock pot, as I added them
1 46-oz can tomato juice
2 pkgs McCormick Chili seasoning, 1.25 oz ea
1 TBSP cumin
1 TBSP garlic with parsley

Used up 4 more cans of canned goods, prior to moving them cross country, yippee! I usually make everything from scratch, but the canned goods are so fast and easy, which is what I need as I pack boxes. I only had to chop an onion. Also canned goods are heavy and will cost a lot in gasoline to move across the country.

Hi. I don't know if you read my second message that stated these weren't made in the slow cooker. But I don't see why they couldn't be. Here's the recipe:

Calico Beans

1/2 C bacon, chopped
1 lb lean ground beef (I use turkey)
1 (15oz) can pork & beans
1 (15oz) can kidney beans, drained
1 (15oz) butter beans
1 (15oz) lima beans, drained
1/2 C ketchup
1 C packed brown sugar
1 C chopped onion
3 TBS white wine vinegar
1 tsp mustard powder
1/2 C chopped celery

Brown beef/turkey with onions until done. Combine all ingredients together and bake for 1 hr @ 350.

Makes 9/1 cup servings
Calories 387, Fat 9.2g, Cholesterol 33mg, carbohydrate 59g, fiber 9.7, protein 19.6g, iron 4mg, calcium 94mg

Crockpot Tamale casserole with changes will be cooked again! Picky fiance and my teenage son have cleaned the pot! Only complaint was not spicy enough. Tabasco could easily fix it or hot Rotelle Tomatoes. I will also probably use some TVP in with the meat next round, again to up the fiber/reduce fat.

1/2 lb breakfast sausage
1/2 lb Ground beef extra lean (96/4)
1 onion, diced
1 green pepper, diced
1 egg
1 1/2 cups milk, skim
1 cup cornmeal
1 can pinto beans, rinsed / drained
1 can whole kernel corn, drained
1 can diced tomatoes, seasoned chili style undrained
1 chili seasoning packet
1 cup shredded Mex cheese
olives (green/black)
lettuce shredded
salsa
FF sour cream

In skillet cook sausage, ground beef, onion, bell pepper until meat is no longer pink. Drain. In a bowl, combine the egg, milk and cornmeal until smooth. Add pinto beans, corn, tomatoes, chili seasoning and meat mixture. Transfer to a greased slow cooker (mine is oval). Cover and cook on high for 3 hours and 45 minutes. Sprinkle with cheese; cover and cook 15 minutes longer or until cheese is melted. Serve with olives, salsa, lettuce, sour cream.

Shredded Beef & Beer Gravy

2 1/2 pounds lean beef stew meat, cubed (I just buy a lean roast and cube it myself - I can control the amount of fat that way)
2 tsp onion powder (original recipe called for a sliced onion - you can do either, we just prefer the texture w/out the onions)
1 tsp garlic powder
6 ounces beer (use your favorite beer - you can use an entire bottle but I will warn you that it can have a bitter aftertaste)
1-2 cups beef broth (I add 1 during cooking and sometimes add up to another cup if it is too thick before I thicken it)
1/2 teaspoon salt (this is plenty - I sometimes omit)
1/2 teaspoon black pepper
1-1 1/2 teaspoons yellow mustard
2 tablespoons tomato paste

3 tablespoons melted butter or margarine
1/3 cup flour

Place all ingredients, except butter and flour in crockpot; mix well. Cover and cook on low for 8 to 10 hours. Use potato masher to shred the beef (do it directly in the pot - just be careful not to splash the liquid on yourself). Mix melted butter with flour; stir in 1/2-1 cup of the hot liquid from the meat; add it to the beef mixture, stir to combine. Turn to high and cook uncovered until thickens, about 15 to 20 minutes. Serve over hot noodles (I use whole wheat) with lots of veggies on the side.

Can also serve over biscuits or toast, but I feel less guilty with the noodles. LOL

This is very spicy so if you don't like heat, I would cut back on one of the chipotles. The sauce is thin, and you may want to thicken at the end with flour. We like it and don't put that much sauce on the sandwich. The sauce flavors the meat without having a lot on the sandwich. The sandwich is good with slaw on it as well. It is a bit high in calories and fat, but I also think it serves more than eight. The nutritional information does not include the hamburger roll. Enjoy

Southwestern Pulled Brisket Sandwiches

3lbs beef brisket
Kosher salt
Freshly ground black pepper
2 Tbs. vegetable oil
5 cloves garlic, peeled and smashed
1 Spanish onion, halved and thinly sliced
1 Tbs. chili powder
2 tsp ground coriander
2 tsp ground cumin
1/4 cup apple cider vinegar
3/4 cup water
1/2 cup ketchup
2 whole canned chipotle chilies in adobo
2 bay leaves
3 Tbs. molasses

Season the beef generously with salt and pepper to taste. Heat a large, heavy skillet over medium-high heat. Add the oil and heat just until beginning to smoke. Add the meat and cook, turning once, until browned on both sides, about 10 minutes total. Transfer the meat to the slow cooker, leave the skillet on the heat.

Add garlic, onion, chili powder, coriander, and cumin to drippings in the skillet and stir until fragrant, about 1 minute. Add vinegar and boil until it's almost gone, scraping the bottom of the pan with a wooden spoon. Stir in water and pour mixture over the brisket. Add the ketchup, chopped chipotles, bay leaves and molasses. Cover the cooker, set on low, and cook the brisket until it pulls apart easily with a fork, about 8 hours.

Remove meat from crockpot and add orange juice and maple syrup to crockpot and turn to high to cook down liquid. Return the meat to the crockpot. Serve on soft rolls or hamburger rolls with pickles. Serves 8.

Yummm made some Venus De Milo soup (aka Gregory's special soup) over the weekend in my 7 quart crockpot. Easy-peasy and freezable too.

We call it Gregory's special soup because when my son was 4-5 I thought it was a great way to get him to eat his veggies. I had him help me make it and told him if he ate it, it would make him really big and strong. After he had a bowl of it I had him flex his muscle and made a big deal out of how I could already tell his muscle had grown. Then his grammy came over and did the same thing. He was beaming and asked for another bowl. He's 17 today and it's still his favorite soup!

Its probably known as minestrone soup to most.

1 28 oz can of crushed or puree tomatoes
1 can each, low salt:
Corn, baby peas, carrots (or baby carrots),
green beans (add any others you'd like, I used
to also use mushrooms and lima beans but my son
doesn't like those so I omit them now)
1 envelope Lipton Onion Soup mix
1 tablespoon parsley
1/2 tsp garlic powder
1/2 tsp pepper
2-3 (tomato cans full) of water
1/2 box of Orzo pasta
1 lb extra lean hamburger or ground turkey

I saute the hamburger (turkey) and place it in the crockpot. Add all but the orzo and cook on high until bubbling. I add the orzo, turn it down to low and when the pasta is done it's ready to eat. Being soup you truly can leave it on until you're ready to eat. This soup freezes very well. Just add a little water or beef broth when you reheat it.

Beef Soup

Lightly browned beef cubes (I make my own from roasts (store-bought always seems to have a ton of fat), 4 sliced carrots, 4 cubed potatoes, a small can of tomato sauce, 1/2-1 cup of red wine, 3-4 cups of beef broth (I add that last just to cover), and a packet of Knorr vegetable soup mix.

Swiss Steak

1 1/2 pounds boneless beef round or chuck shoulder steaks, cut 1/2 inch thick
3 tsp. flour
1 tsp. salt
1/2 tsp. pepper
2 TBSP. oil
3/4 cup chopped carrots
3/4 chopped onion
3/4 cup water
1/2 cup chopped green bell pepper
1/2 cup chopped celery
1/2 cup picante sauce
1/4 cup ketchup
1 TBSP. white vinegar

1. cut beef into 6 pieces, pound to 1/4-inch thick. Combine flour, salt and pepper. Lightly coat beef with flour mixture
2. Heat oil over med. heat and brown meat.
3. put everything in the crockpot and cook for 6-8 hours on low.

You can serve this over noodles or potatoes even rice.

If you're in a hurry I bet you don't have to fry the meat first. You might have to thicken it up.

I am making stuffed peppers in the slow cooker!

:) The smell is so intoxicating. :)

The recipe is so easy.

-Cut tops off the pepper and core the seeds out.
-Mix one pound of ground meat (I used lean ground beef, but you can also use ground turkey for less fat and calories) and 2 cups of vegetable juice, and 2 cups of instant rice in a bowl.
-Once mixed, stuff the peppers leaving a little room at the top for stewed tomatoes. The recipe calls for two cans of stewed tomatoes.
-Then spray slow cooker with Pam. Then put peppers in and surround peppers with the rest of the cans of stewed tomatoes.
YUM!!
Cook on high for 4 hrs
Or on low for 8-9 hrs

Chili

My recipe is simple. I brown very lean ground meat 93% lean.( you can half turkey too if you like). I add that to the crockpot then added 2 chopped onions, 1 quart canned roma tomatoes, 1 8oz can tomatoes sauce. I use 1 can of Kuners chili tomatoes too. Not sure this is sold every where. I then added 1 can of pinto bean( or kidney beans) I add one can of water from the tomato sauce. Then I added 2 chili peppers. If you like it hot add hot chili peppers like jalpenos. You can use canned to. I added about 2 tablespoons of chili powder but you might start with less and keep adding till you get the taste you like. I add a bit of garlic. I don't add salt until it's done and then taste it to see if it needs any.
Cook for 8-10 hours till it's the thickness you like. If it's too thin, remove the lid of crockpot and set it on high and it will thicken as the water evaporates.

Cajun Casserole
I made a new thing today. It's just finishing up. I took:
1.5 pound lean ground chuck
1 med/large onion
1 15 oz. can black beans
1 c. uncooked brown rice
1 15-oz. can diced tomatoes
1 c. frozen peas
3 T. olive oil
Cajun seasoning, generously
Garlic powder, generously
Black pepper, to taste
Kosher salt, to taste
6 c. water (watch the water you may need to add some)

I first put the rice, olive oil, water, seasonings, tomatoes and peas in the slow cooker and put it on high. After 4 hours, when the rice was looking about 75% cooked, I browned the beef and onion together on the stove (used just about 1T of canola oil). When the beef was browned I added it to the slow cooker veggies and mixed. After a half an hour when everything gets blended together, EAT! Very very good! I'm calling it Cajun Casserole.

Mexican Beef Stew

Lean Stew Beef
1 can (28 oz) whole tomatoes
1 cup frozen onions
1 tsp chili powder

Cook 9 to 11 hours on low

Add 1 can Mexican Corn with chilies
And 1 can Black Beans (both drained)
One package of taco seasoning

Serve with low carb tortillas, tomatoes, Mexican cheese, lettuce and avocado for a real treat.

Beef Carbonnade

2 lbs (8 steaks) Cube/Round Steak
8 small red potatoes (quartered)
1 medium onion
1 package onion soup mix
1 tablespoon brown sugar
1/2 teaspoon nutmeg
1/2 teaspoon salt
1/2 teaspoon pepper

Cook on low 9 to 10 hours.

I mixed the dry ingredients, put the potatoes and onion under the steaks then spread the dry ingredients over the top of the steaks. I poured a Miller Lite over the top of the whole thing...

Gingered Beef and Vegetables

Makes: 6 servings

Ingredients
1 1/2 pounds boneless beef round steak, cut into 1-inch cubes
4 medium carrots, cut into 1/2-inch-thick slices
1/2 cup sliced scallions
2 garlic cloves, minced
1 1/2 cups water
2 tablespoons reduced-sodium soy sauce
2 teaspoons grated fresh ginger
1 1/2 teaspoons instant beef-bouillon granules
1/4 teaspoon crushed red pepper
3 tablespoons cornstarch
3 tablespoons cold water
1/2 cup chopped red bell pepper
2 cups loose-pack frozen sugar snap peas, thawed
Cooked rice

Directions
1. In a 3-1/2- or 4-quart slow cooker, combine beef, carrots, scallions, and garlic. In a medium bowl, combine the 1 1/2 cups water, soy sauce, ginger, bouillon, and crushed red pepper; pour over mixture in cooker.
2. Cover; cook on low-heat setting 9 to 10 hours or on high-heat setting 4 1/2 to 5 hours.
3. If using low-heat setting, turn to high-heat setting. In a small bowl, combine cornstarch and the 3 tablespoons cold water; stir into meat mixture along with bell pepper. Cover; cook 20 to 30 minutes more, or until thickened, stirring once. Stir in sugar snap peas. Serve with rice.

Nutrition facts per serving: 350 calories, 29g protein, 35g carbohydrate, 10g fat (4g saturated), 3g fiber

I modified a recipe I found on SparkRecipes that was posted by LADYBUG-DR. I wanted to give proper credit, but I made significant modifications. Here is the recipe as I made it.

Slow Cooker Beefy Rice

Ingredients

1.5 lbs stew meat
2 14.5 oz can diced italian tomatoes with oregano, garlic and basil
2 cups water
1 packet Onion soup mix
1 tbsp worcestershire sauce
1 cup dry brown rice

Directions

Start stew meat w/ onion soup mix and water.
Cook for a couple hours on high setting.
Add diced tomatoes and worcestershire sauce.
About an hour or more before eating, add dry brown rice.

Number of Servings: 8

In a skillet, mix the olive oil, garlic, salt, and pepper. Now add the T-bone steak and brown both sides. Place the potato into the Crock pot and the steak over it. In the skillet, sauté the sliced mushrooms and the pour into the Crock pot. Cook on low for 8 hours and the steak should be very tasty.

Crock pot Beef and Broccoli Recipe

2 lbs cut up broccoli
2 cloves of garlic (minced)
1/2 tsp of salt
1/2 tsp of pepper
2 tablespoons oyster sauce
1 tablespoon soy sauce
1 teaspoon cornstarch
1 tablespoon water
3/4 pound thin fajita beef strips
Combine the salt, pepper, garlic, oyster sauce, and soy sauce. Marinate the beef strips in the mixture. Place the broccoli into the Crock pot followed by the beef strips. Now pour the remaining marinade into the Crock pot. Add the cornstarch and water together and pour into the stoneware. Mix the liquid around lightly and cook on low for 6 hours for some delicious beef and broccoli with a thick, sweet sauce.

3 lbs of lean brisket

Brisket and Potatoes Crock pot Recipe Directions
First trim any excess fat from the brisket and brown both sides in a skillet using vegetable oil. Mix the salt, pepper, garlic, and soy sauce together and marinate the brisket with this mixture. Place the potatoes into the Crock pot and add the flour to create a natural gravy mix after the cooking has finished. Now place the brisket over the potatoes and pour any excess marinade over the brisket. Cook on low for around 10 hours and meat should be very soft and tasty.

Crock pot Roast Recipe Ingredients

2 lbs chuck roast
3 cloves of garlic (minced)
1/2 tsp of salt
1/2 tsp of pepper
1/2 tsp ground cumin
2 tbsp of flour
2 medium potatoes
1 celery sliced
1 carrot sliced
1/2 cup of red wine
Trim off excess fat from the roast and if preferred, brown both sides on a skillet with some vegetable oil. Mix the garlic, cumin, salt, and pepper and rub over the roast. Place vegetables sprinkled with the flour into the bottom of the Crock pot and place roast over the vegetables. Pour red wine into the Crock pot. Cook on low for 10 hours and a delicious pot roast should be ready.

Crockpot Italian Pot Roast recipe

1 (2 1/2 pound) boneless beef round roast
1 medium onion, sliced
1/4 teaspoon salt
1/4 teaspoon pepper
2 (8 ounce) cans no-salt-added tomato sauce
1 (0.7 ounce) package Italian salad dressing mix

Slice roast in half and place in a 3 1/2 quart crock pot. Add onion and remaining ingredients. Cover and cook on HIGH setting 5 hours or until roast is tender. Or, cover and cook on HIGH setting 1 hour; reduce to LOW setting and cook 7 hours.

Slice meat to serve.

Serves 8.

Chili Mac Crock Pot recipe
16 ounces extra lean ground turkey or beef
1 cup chopped onion
1 (16 ounce) can tomatoes, coarsely chopped and undrained
1 (10 3/4 ounce) can Healthy Request Tomato Soup
1 cup reduced-sodium tomato juice
2 teaspoons chili seasoning
1 (8 ounce) can red kidney beans, rinsed and drained
1 cup elbow macaroni

In a large skillet sprayed with olive oil flavored cooking spray, brown meat.

Meanwhile, in a crock pot container sprayed with cooking spray, combine onion, undrained tomatoes, tomato soup, tomato juice, and chili seasoning. Stir in kidney beans and uncooked macaroni. Add browned meat. Mix well to combine.

Cover and cook on LOW for 6 to 8 hours. Mix well before serving.

Serves 6 (1 full cup).

Slow and Juicy Shredded Beef Sandwiches

Ingredients:
3 pounds boneless beef roast
1 medium onion, chopped
1/3 cup vinegar
3 bay leaves
1/2 teaspoon salt (optional)
1/4 teaspoon ground cloves
1/8 teaspoon garlic powder
12 hamburger buns, split


Directions:

Cut roast in half; place in a crockpot. Combine next 5 ingredients; pour over roast. Cover and cook on low heat for 10 to 12 hours or until meat is very tender.

Discard bay leaves. Remove meat and shred with a fork. Serve on buns.

Ingredients:

Crockpot Hearty Beef Stew

1 1/2-2lbs beef stew meat
4 large potatoes (red, yellow, or idaho) cleaned and quartered but not peeled
1-2 cups peeled and chopped carrots
2-3 parsnips, peeled and chopped
1/2 cup onion, chopped
1/2 cup celery, chopped
any other vegetables, chopped into bite site pieces
1/2 cup red wine (I use Bella Sera Pinot Noir)
1/2-1 cup beef broth
1 can cream of (mushroom, celery, potato) soup
1 packet Lipton Onion Soup mix
whole herbs and spices (I use dill for a summery flavor and rosemary or thyme in the fall and winter, along with a few slightly crushed cloves of garlic)

Brown meat in large skillet 1/2 at a time with little or no oil and some pepper.

Add all root vegetables to bottom of crockpot, add any other veggies (like green beans or peas) on top of those.

Whisk cream soup, broth, wine, and onion soup mix together and pour 2/3 of the mixture over vegetables in pot. Top with beef, onions, and celery and pour on the rest of the soup mixture. Place any whole-leaf herbs on top for easy removal.

Cook on high 4-5 hours or low 8-10, stir well before serving. Serves 6 with bread, more as part of a larger meal.

I love this recipe since it's so customizable and can be made healthier with substitutions in the soup &/or broth. I use swanson low sodium broth and 98% fat free cream of mushroom with roasted garlic soup. I'm thinking I may try it with chicken and white wine soon.

I add in a can of diced tomatoes when my dad visits. My crew doesn't like tomato chunks so I never do for the 6 of us.

Shredded Beef & Beer Gravy

2 1/2 pounds lean beef stew meat, cubed (I just buy a lean roast and cube it myself - I can control the amount of fat that way)
2 tsp onion powder (original recipe called for a sliced onion - you can do either, we just prefer the texture w/out the onions)
1 tsp garlic powder
6 ounces beer (use your favorite beer - you can use an entire bottle but I will warm you that it can have a bitter aftertaste)
1-2 cups beef broth (I add 1 during cooking and sometimes add up to another cup if it is too thick before I thicken it)
1/2 teaspoon salt (this is plenty - I sometimes omit)
1/2 teaspoon black pepper
1-1 1/2 teaspoons yellow mustard
2 tablespoons tomato paste

3 tablespoons melted butter or margarine
1/3 cup flour

Place all ingredients, except butter and flour in crockpot; mix well. Cover and cook on low for 8 to 10 hours. Use potato masher to shred the beef (do it directly in the pot - just be careful not to splash the liquid on yourself). Mix melted butter with flour; stir in 1/2-1 cup of the hot liquid from the meat; add it to the beef mixture, stir to combine. Turn to high and cook uncovered until thickened, about 15 to 20 minutes. Serve over hot noodles (I use whole wheat) with lots of veggies on the side.

Can also serve over biscuits or toast, but I feel less guilty with the noodles. LOL

Halupki Casserole

1 1/2 lb. chopped cabbage
1 lb. ground beef
1 small onion, chopped
1/3 cup uncooked rice
1 can tomato soup
1 1/2 cups water
salt, pepper, garlic powder

Place cabbage in bottom of slow cooker. Brown meat, onion, and add spices to taste. Stir in rice and pour over cabbage. Mix soup and water and pour over cabbage mixture. Cook until cabbage is done probably 4 hours on high or 8 on low. DO NOT stir before baking. Cabbage must be on the bottom or it will not get done.

Put the following in the crock pot in order:

2 c baby carrots, cut in chunks
4 medium potatoes, cubed
2 lbs stew beef
1/2 c diced onion
1 jar beef gravy
1 can diced tomatoes or tomato soup
1 tbsp beef bouillon (sp?)

Put the lid on and cook on low for 8 hours, or until potatoes are done. My family loves this one.
