Ham and bean soup
I freeze all my leftover ham bones. When I'm ready to make soup I start the ham bone slowcookin in seasoned (bay leaf, bollion, thyme, pepper, whatever spices you like) water, while I soak white navy or lima beans overnight. Next morning I take out the ham bone, add back in ham left on the bone or any extra I have and put in chopped onion, celery, and the beans Let cook all day on low.

I don't see why you couldn't put the brown sugar and mustard rub inside the foil. Or the pineapple for that matter, that might help tenderize the skin.

As for vegetables why not put them in a separate foil on top?

Yes, thanks, I was talking about a boneless 'half ham' which is about 1 1/2 pounds, I think. If I did it in the oven, I would do it either with pineapple, or with a 'crust' of brown sugar and mustard. I have also heard of cooking it with coke or gingerale.
Do you think any vegetables could be cooked with it, or would they be too salty? I was thinking of something like onion and/or parsnip?

Leslie, are you talking about a boneless ham? I so I have done it. I put it in with about a cup of water.

The meat was tender, but the skin was a bit tough. If I was going to try it again I would wrap it in foil to hold the moisture against the skin.

Great idea for a ham thread, and I had just wanted to ask how to do a half ham (packaged) in the crockpot? Is it necessary to cut it up? What additions, including liquid, would be good?

take 3-5 potatoes, sliced, 1 onion sliced, 2 ribs of celery sliced. I layer them in the Crockpot and pour 1 can of healthy request cream of celery soup and 1/2 cup water Let it cook on low for about 5-6 hours, test to see if the potatoes are getting soft, let them cook till they are soft but not mush. I them add 1 cup of frozen peas and ham, You can chopped it in cubes or any size that works for you. let it cook for approx. 1 hour or less.
Sometimes I add low fat cheese at the end and mix it to melts
