Tortilla lasagna: 1 pkg. whole wheat tortillas 1 pkg. taco seasoning 1-2 lbs hamburger(lean) 1 pkg. frozen corn 1 container non-fat sour cream 1 can fat-free refried beans 1 pkg. shredded light cheese(I use chedder) 1 can salsa I spray the crockpot, and just start layering!! It cooks on low for 4-6 hours. Oh, I brown the hamburger and add some diced onions and peppers, w/the taco seasoning. You can use more or less seasoning, I use 1 pkg only due to salt.
This is one of my 'Go-To' meals. I've been known to swap out the main ingredients, like chicken pieces for ground beef, or stir fry style veggies instead of plain mixed. I've even eliminated the seasonings & broth if the veggies are strongly flavored or if the meat was seasoned.
Easy Chili per serving: 290 cal, 3.8g fat, 8.3g fiber, 30.1g carbs
Really easy chili, only a little pit of prep. I make it with ground turkey but it can certainly be made with ground beef if you prefer. I often serve this with store-bought corn bread as a treat.
1.5 pounds ground turkey (extra lean/99% fat free) 1.5 cups coarsely chopped onions (prefer red) 2 tablespoons chili powder 1 jar (26oz) pasta sauce (prefer Classico Tomato &Basil) 1 can (19oz) red kidney beans, drained
Using a skillet brown the ground turkey*, onions, and chili powder together, drain. Add to slowcooker, add beans and pasta sauce. Stir. Cover slowcooker and cook on LOW for 4 hours or on HIGH for 2 hours. Makes 6 1-cup servings.
*If you've never browned ground turkey before - it doesn't really brown it "whites". I add this for those of you who, like me, are just starting to cook and don't know these things. Enjoy!
Roll up ground beef into one inch balls. Brown them in a skillet. Put two jars of grape jelly into crockpot and melt it on low. Add meatballs...cook on low until cooked through. The longer you cook it, the better. Use lean meat and sugar free jelly for the healthy version.

This is a complete meal in the crockpot, meatloaf with potatoes. INGREDIENTS: 1 package instant boxed stuffing mix - including seasoning packet 3 eggs 2 pounds lean ground beef 1 cup ketchup 2 or 3 cans whole white potatoes, drained
PREPARATION: Mix dry stuffing mix and seasoning packet with eggs and lean ground beef; place in slow cooker. Turn heat to LOW; cook for 6 to 8 hours. Add ketchup to top of meatloaf and canned potatoes around all around the loaf.
