I made one of my favorite recipes last, peanut butter pumpkin soup. It's really quick and easy....

TBSP olive oil
1 onion-chopped
1 15 oz can pumpkin puree (not spiced for pie)
2 cups fat free chicken broth
1 cup water
1/4 tsp curry powder
1/4 tsp salt
1/4 to 1/2 cup peanut butter
plain greek yogurt

Cook the onions over medium heat in olive oil for about 4 minutes.

Stir in the rest of the ingredients except the greek yogurt. Heat through.

Serve with a swirl of yogurt and I like mine with a dash of cayenne. YUM!

Lunchtime fave for my two year old and I. One pan recipe!

Veggie Quesadillas:


1/2 C chopped yellow squash
1/2 C chopped tomato
1/2 C chopped Green Pepper
1/2 C chopped onion
1/2 C chopped button mushroom
1/2 C chopped Red bell pepper
6 (8in) flour tortillas
1 1/2 C Shredded Low-Fat Cheese

Saute all the veggies with a little garlic and pepper on medium high. Drain Oil and put to the side in a bowl.
In the same skillet, lay tortilla flat, cover the entire shell with 1/4 C cheese, and put a T of veggie mix on one half. Wait until cheese melts then fold in half.


Filling and delish. only 342 calories for one! (: I reheat the extras for the next few days. Quick and easy.

Curry sweet potato lentil dish.
Easy and quick to make. 6 to 8 servings. will keep very well in fridge or frozen for later. nice as a side dish with diner instead or rice or potato. also very high in protein. Enjoy!!


Ingredients

2 tablespoons of olive oil
1 large cooking onion
1 med sweet potato
1 (1inch) piece fresh ginger, peeled and chopped
1 Large Garlic clove chopped
1 bay leave
3.5 Cups no fat chicken stock
1.5 cups of red lentils


Directions

1. In a Saucepan bring 3.5 cups of no fat chicken stock to a boil.

2. In a large saucepan over high heat, warm the oil. Add the onion and a pinch of salt and saute, stirring occasionally, until the onion softens, about 3 to 4 min.

3. Add the sweet potato, ginger, garlic, curry powder and saute until fragrant, about 2 min. Pour in the boiling chicken stock and pour in lentils. Reduce the heat to Med-low, put bay leave on the top and cover. Simmer with cover for about 18 to 20 min

This is a very old WW recipe:

Put your favorite cottage cheese in bowl, slice some banana ( & strawberry if you want)
around the sides. Take a surgar free (I use Smuckers) strawberry preserve, warm it in a micro wave so that you can drizzle it over your cheese & fruit in the bowl.

Makes a good snack or even breakfast emoticon emoticon

One of my favorite quick recipes is for chicken breasts with Diet Pepsi. I can't stand at the stove more than a minute or 2, so it has to be quick. Heat 1 Tbsp olive oil in skillet on high heat. Then place skinned, boned chicken breasts in and quickly brown on one side, sprinkling with salt and garlic powder. Turn to brown on other side and pour Diet Pepsi (I suppose diet Coke would also work) over chicken so it's about 1/2 inch deep in pan. Turn heat down to medium and cover. No need to stand there--sit down and listen for the sound of sizzling when the liquid is all gone. Uncover and pour in just enough Diet Pepsi to barely cover bottom of pan. Stir breasts in liquid to take up the carmelization on skillet bottom, turn and stir some more. Plate the chicken and pour the few remaining drops of liquid over top and serve. This takes about 10-12 minutes start to finish. The chicken will be totally done, yet juicy and delicious. I serve it with steamed broccoli and other veggies. My husband doesn't like chicken, but he'll eat this and enjoys it.

I made a Mediterranean chicken the other night which turned out super good. I winged it so the amounts are "flexible."

A little olive oil on the bottom of the crock pot - 3-4 Tbs?
Some beef broth (all I had, chicken broth would probably be even better) - about 2 cups
6 boneless, skinless chicken tenders - frozen
Capers - 1-2 tsp.
marinated artichoke hearts, drained - 1 cup
1 jar Trader Joe's red pepper spread
Chopped garlic - 1-2 Tbs
Sea salt - 1-2 tsp.

I cooked it on low for 8 hours (did this when I went to bed and so I had lunch the next day).

To add to the super easy meal, I made some microwave quinoa while I was in the shower the next morning and threw about 1 cup of it in a tupperware with 2 chicken tenders and made sure I put some of the yummy sauce over the quinoa. Instead of water I used the beef broth to cook the quinoa.

This would probably also be really good with diced tomatoes and some sun-dried tomatoes if you don't have the red pepper spread.

It was SO good! Very pleased with this experiment. Usually my experiments go hideously wrong. :-)

i am new here so you may already have this chicken idea I also posted it on another thread just now. it is chicken and dumplings using lowfat pillsbury biscuits cut in fourths, chicken thighs, low fat cream of mushroom soup and carrots, celery. it really is quite delcious. I add water according to how much liquid i prefer.

This recipe sounds really yummy, but I have a question or two...

Does the slow cooker need to be on high or low heat?

Also, since you're really not supposed to lift the lid of the slow cooker to check the food, an idea of how long it will take, on high or low heat (either) would be helpful.

Crockpot Chicken Parmesean

Tried this great take on an old traditional dish. Tried to incorporate healthier choices in the ingredients.

2 egg whites
2-4 T. butter, melted
salt and pepper to taste
3 c. bread crumbs (I didn't have so used graham crackers)
4-6 boneless, skinless chicken breasts, thawed
1 - 14 oz. pizza sauce
4-6 slices low fat mozzarella cheese

Combine egg whites, butter and seasoning. Dip chicken in liquid mixture, then cover in bread crumbs; repeat for all chicken pieces. Place chicken in skillet and cook until no longer pink and place in crockpot. Pour pizza sauce over chicken and cover. Cook on low 6-8 hours. Place mozzarella cheese slices over top 15 minutes before serving to melt.

This was delicious. I served with garlic bread

Chicken Noodle "Casserole"

1 bag of cooked No Yolk egg noodles
2-3 cans chopped chicken
1/2 bag frozen mixed veggies
2 cans Campbell's Healthy Request Cream of Chicken Soup

Cook and drain noodles. Mix everything together. Bake at 350 degrees until heated through. 6 servings - also freezes well.

1 butternut squash
1/4 cup olive oil
1 Tbsp ground cinnmon
1 tsp ground nutmeg
(i also used about a tsp packed brown sugar, lightly on top.)

preheat oven to 420 degrees
turn burner to just over warm

chop squash into quarter-size pieces, guessing about the right size when it comes to the middle (scoop out the seeds)

pour all the pieces, with the olive oil into the pan
(i used a cast iron, but you can use a regular one, just coat the bottom of a baking dish with non-stick spray, or something as well)

sprinkle the cinnamon, nutmeg, (and brown sugar if wished) over the squash pieces, and stir.

turn the heat up to mid-way, and pan fry until squash is soft, and fully coated in ingredients

Put softened squash pieces into the oven and turn oven down to 400

after twenty min. stir, and put back into oven for another fifteen min.

take out of oven, and let cool, then enjoy :)

Tangy Chicken

2 pounds of boneless, skinless chicken thighs
4 tbls plain, low fat yogurt
4 tbls dijon mustard
2 tsps oregano (dried)
2 tsps thyme (dried)
pinch pepper

Mix yogurt, mustard, oregano & thyme.

Put chicken in slow cooker.

Pour mixture over chicken and toss to coat.

Cook until no longer pink.

Oil 1 frozen loaf of uncooked bread. Place in baking insert or loaf pan. Place on top of trivet. Cook on low 2 - 3 hrs - loaf will thaw and rise. Cook on high 2-3 hrs till done.

Simple Swiss Steak Pot Roast

This flavorful Swiss style steak is simple to prepare. Leave all day in a crock pot or on the stove, simmering like a pot roast. Low in calories, high in protein and potassium. 95 minutes to prepare and cook.

Ingredients

2 lbs round steak
1 can diced tomatoes
1 medium onion, sliced in rings
1 C sliced mushrooms
1 C water
1 clove garlic (chopped)
Seasoned salt, garlic salt, salt and pepper to taste.

Directions

1. Brown steak well in a non-stick pan. Remove steak and place in a soup pot or crock pot.
2. Saute onions, mushrooms and garlic in the pan that was used to brown the steak. Saute just enough to soften, until onions become translucent.
3. Add sauted onions, mushrooms and garlic to the steak. Cover with tomatoes and water. Add seasonings to taste.
4. Cover, bring to a boil, and then reduce heat to simmer for at least 1 hour. May be left on low heat or in a crock pot for several hours, and the meat will be very tender.
5. Remove lid and turn up heat. Allow mixture to simmer until the sauce reduces.
6. Serve over brown rice or whole wheat noodles. Add a dollop of fat free sour cream for even more flavor! Rice, noodles and sour cream are not included in nutritional information. Serves 6-8.

Easy Crockpot Baked Apples-
Crockpot baked apples, with orange juice, cinnamon, and brown sugar.
Ingredients-

* 6 large cooking apples
* 3/4 cup orange juice
* 2 teaspoons grated orange peel
* 1 teaspoon grated lemon peel
* 3/4 cup blush wine or cranberry-apple juice
* 1/4 teaspoon cinnamon
* 1/2 cup light brown sugar
* whipped cream

Preparation-
Remove cores from apples and place in slow cooker. In a small bowl, combine orange juice, grated orange peel, grated lemon peel, wine or juice, cinnamon, and brown sugar. Pour over apples. Cover crockpot and cook on low for about 3 1/2 hours, or until apples are tender. Cool slightly and serve with whipped cream or whipped topping.

Shredded French Dip

SERVINGS: 8-10

CATEGORY: Main Dish

METHOD: Slow Cooker

TIME: Prep: 5 min. Cook: 6 hours
Ingredients:

* 1 boneless beef chuck roast (3 pounds), trimmed
* 1 can (10-1/2 ounces) condensed French onion soup, undiluted
* 1 can (10-1/2 ounces) condensed beef consomme, undiluted
* 1 can (10-1/2 ounces) condensed beef broth, undiluted
* 1 teaspoon beef bouillon granules
* 8 to 10 French or Italian rolls, split

Directions:
Halve roast and place in a 3-qt. slow cooker. Combine the soup, consomme, broth and bouillon; pour over roast. Cover and cook on low for 6-8 hours or until meat is tender.
Remove meat and shred with two forks. Serve on rolls. Skim fat from cooking juices and serve as a dipping sauce. Yield: 10 servings.

I have used the 3 Packets and a Roast, its great! Very easy and filling. I gave my co-worker the recipe and she added some veggies which added even more to it!

I get a newsletter called "Chet's Crock" that sends me recipes for crockpots about once a week. This came from that newsletter. This is the second recipes I've used where you put pepper and garlic directly onto the beef. I didn't have tomato juice, so I mixed 1/4 cup tomato sauce with 1/4 cup water, and I didn't have steak sauce so I just added more worcestshire sauce. It was pretty good; I used a pretty bleh cut of meat (my mom and dad buy half a cow and give us the cuts they don't use; hey! free beef!). I cooked it on high for about 5 hours. If you used a roast, I think it would be better. Oh, and I didn't use celery; I added potatoes instead.


All-Day-Long Crockpot Beef

1 1/2 lb favorite cut beef roast
1/2 tsp black pepper
2 garlic cloves, minced
1/2 pk onion soup mix
2 tsp Worcestershire sauce
1 Tbs steak sauce
3 carrots, sliced
2 celery stalks, diced
1 green bell pepper, chopped
1 yellow onion
1/2 cup water
1/2 cup tomato juice

Cut beef roast into serving-sized portions. Use more
beef if you need more than 6 servings. Brown beef in a
bit of vegetable oil, although you can skip this step if
rushed for time.

Slice onion and separate into rings. Dice the peeled
carrots, dice the celery and slice the peppers into thin
strips or circles. Place these into bottom of crockpot.
Sprinkle the beef pieces with fresh ground black pepper,
minced garlic and the onion soup mix. Place on top of the
vegetables.

Mix the steak sauce and Worcestershire sauce in a small
bowl with about 1/2 cup water and 1/2 cup tomato juice.
Pour this over the meat.

Turn the crockpot to high for 30 minutes, or, if you're
in a hurry, skip this step. Turn to low, cover and cook
for 7-9 hours.

Keep the crockpot covered as much as possible
throughout cooking time. A crockpot can be used to cook
this type of meal for a varied amount of time, depending
on your schedule. It is not important that you take the
meat and vegetables out at a specific amount of time. One
or two hours either way usually makes no difference.

When ready to serve, dip meat and vegetables out of pot
with a slotted spoon. Use the liquid as is or turn
crockpot to high and thicken liquid with a little flour
or cornstarch.

Cuban seasoning (I use creyoyo-Goya salad/soup seasoning

Brown chicken, add other ingredients in the morning. Before dinner add frozen spinach and/or broccoli so they do not turn to mush.

My husband's favorite meal, and less than 400 calories per serving!
Don't worry the ginger ale doesn't make it sweet, just tender and tasty. for more details I have this in my shared recipes.

2lbs. pot roast (or chuck roast, etc.)
2cups ginger ale
1tsp. minced garlic
1 medium onion (sliced)
6 medium potatoes (whole)
salt and pepper to taste

place roast in slow cooker
add ginger ale
sprinkle minced garlic into ginger ale
add potatoes and onion

cook on low for 7-9 hours or on high for 3-4 hours

yield- 6 servings (4 oz. roast, 1 potato, 1/6 onion per serving)

MAPLE BBQ CHICKEN

1 cup ketchup
1/2 cup maple syrup
2 tbsp prepared mustard
2 tbsp Worcestershire sauce
2 tsp lemon juice
1/2 tsp chili powder
1 tsp garlic powder
4 boneless/skinless chicken breasts OR 12 boneless/skinless chicken
thighs

Place all ingredients in crockpot and cook on LOW for about 7 to 8 hours or until chicken is done.
Serve over hot rice.

Also works with pork chops.

chicken legs, skin removed
chorizo or cacciatore sausage, sliced
carrots, diced
potatoes, diced
celery, diced
onion, diced
can of cannelini or butter beans
can of crushed tomatoes
paprika, garlic, salt and pepper

I try and have a 50:50 ratio of vegies to meat.

Brown the chicken legs if you can be bothered but it's not imperative.
Put it all in cooker on low in morning, it will be ready when you come home!

Three-Packets and a Roast

(Recipe I had this morning in email from Mary Hunt, Everyday Cheepskate):

This recipe makes me look like a much better cook than I really am. Give it a try soon, and you'll know what I mean. You can use any cut of meat for this one, the tougher, the better, as that's the one that will have the most flavor.

1 packet dry ranch dressing mix
1 packet dry Italian dressing mix
1 packet dry brown gravy mix
1 beef roast, any cut

Place the roast in the slow cooker. Sprinkle dry mixes over the roast. Pour 1 cup water into bottom. Cover. Cook on Low for 7 to 8 hours depending on just how cheap that cut of meat is.

Seamyst- let me know how you like it and if you did anything different. I am always up for changes in recipes- anything to make them better! emoticon Also, I just tried a meatloaf recipe in the crockpot. It was delicious! I used venison but you can use beef if you would rather, I also just eyeball everything so these are not exact amounts, you may have to add a little or take away. It's worth it- here it is:


2 LBS. GROUND VENISON(OR GROUND BEEF)
1 PACKET LIPTON ONION SOUP MIX
1 TBSP MUSTARD
1/3 CUP KETCHUP + MORE KETCHUP FOR TOP
1 TBSP BARBECUE SAUCE
1 CUP SEASONED BREAD CRUMBS
1/4 CUP GREEN PEPPER
1/4 CUP ONION
2 EGGS
CHEESE CLOTH(OPTIONAL)

MIX ALL INGREDIENTS TOGETHER. IF THE MIXTURE IS TOO SOFT FOR YOU- ADD MORE BREAD CRUMBS(A LITTLE AT A TIME)NOT SOFT ENOUGH- ADD KETCHUP. PLACE CHEESE CLOTH ON BOTTOM OF CROCKPOT. SHAPE INTO MEATLOAF, PLACE IN CROCKPOT AND LET COOK FOR 6-8 HOURS ON LOW OR 3-4 ON HIGH. ABOUT 1 HOUR BEFORE THE MEATLOAF IS DONE, POUR KETCHUP OVER THE TOP. YOU WILL NOTICE THAT THE MEATLOAF EVEN GETS A LITTLE BROWN ON TOP AS IF IT WERE BEING BAKED IN THE OVEN. LIFT THE MEATLOAF OUT USING THE CHEESECLOTH. SLICE AND SERVE. emoticon YUM!

This may not be the healthiest recipe but it sure is delicious! Everything in moderation, right?

APPLES AND PORKCHOPS

2 cans of apple pie filling(you can try the sugar free if you want to make it healthier)
8 butterfly porkchops(lean, boneless is best)
1 cup of no sugar added applesauce

Place the apple pie filling in the bottom of the crockpot,pour the apple sauce over the apple pie filling, then add the pork chops. No need for water because the apple pie filling breaks down and so does the applesauce, creating very moist delicious chops. Cook on low for 6-8 hours(depending on thickness of chops) or high for 4 hours. My family loves this recipe.

This is the first recipe I have ever posted so I hope I did it right. If not, let me know and I will correct. emoticon emoticon

Here is mine, made the other night and took to work for a farewell party....

Large crock pot, filled to over the top with frozen chicken legs and thighs. Add 1 can Campbell's Nacho Cheese soup, and 1 pkt. of Taco seasoning. Covered, which did not set till it cooked awhile! Cook on low for 7
hours. I turned it off and took it to work, plugged in and kept it on warm till midnight. The meat was perfect and nicely on the bone! and YUM, and there were maybe 3 peices left!

My mom's pork roast with veggies

4 to 5 pound pork shoulder roast or big enough to fit into your slow cooker
potatoes
carrots
Any other veggies

Put your roast in the night before or the early morning of the day you're going to have it. If you are going to start it the night before, wait until morning to put the veggies in so they won't disappear before it's time to eat it. If you're doing it the day you're going to eat it, wait until noon or after to put the veggies in so they can cook down and be tender by supper time.

Make sure that your slow cooker is set on low the entire time until you are ready to serve.

Not a dinner recipe, but still good! Basically apple pie without the crust so its quick and easy and way lower in calories but still has all the pie taste. Pretty much this recipe is why I even have a crock pot!


6-8 pie-able apples (generally not gala or red delicious, but everything else seems to work okay)
1/4-1/2 cup brown sugar
2-4T lemon juice or one high quality citrus popsicle (I prefer either mandarin orange or lemonade)
cinnamon
cloves
nutmeg

Core apples and cut into chunks, slices, rings, bites, pieces....
Alternate layers of apple, sugar and spices in crock pot
Dribble lemon juice over top or place popsicle on top of apples
Cook on high for 1 hour or low for 2-3, (remove popsicle stick if you haven't already), stirring once or twice while cooking.

Enjoy!

CROCK POT SPAGHETTI SAUCE

I always use my crock pot for any type of sauce (it doesn't stick)!

1 can/jar prepared spaghetti sauce
3 cans tomato paste
1 large can diced tomatoes
5 cloves garlic, diced
1 large onion diced
2 bell peppers, diced
italian seasoning,basil,salt,pepper,red pepper flakes to taste
8 sausage links (your choice of flavor), diced

Combine all the canned ingredients and seasonings in the crock pot on high and let simmer.

Add sausages,onions,bell peppers and garlic to skillet and saute until sausage is cooked and vegetables are soft. Add additional seasonings to meat mixture for added flavor.

Combine meat mixture with sauce and let come to a boil - checking and adding seasonings as needed.

As you can see, this is a very simple and quick recipe to fix (along with being very good). You can use ground beef in place of the sausage, but I have found that the sausage adds more body and flavor to the sauce.

Crock Pot Italian Beef

I make a large batch of this in my large crock pot and it freezes great.

3 or 4 lb of cube steak - roll in flour and brown in skillet with as little oil as possible - I use Olive oil.

In large bowl combine:

1 large chopped onion
2 large cans Italian tomatoes
fresh mushrooms if desired
4 Tbsp of Italian seasoning
Garlic to taste - we like a lot so I use 2 Tablespoons granulated
1 15-16 oz can tomato sauce

Stir that all together and then layer the meat and sauce. Cover and cook all day on low. Meat gets tender and the sauce is delicious. Serve over any kind of pasta or serve with mashed potatoes and a vegetable. If you freeze it divide up the sauce with the meat and if you need more sauce to serve it over pasta next time, just add some tomato sauce or some prepared spaghetti sauce. Even healthier if you roll the meat in wheat flour and serve over wheat pasta.

Sorry it took so long for me to submit a recipe

This is a great recipe. one of my favorites for the crock pot. If your in a hurry! this reciepe isn't for you but it's a great one! Hope you like it as much as I do.

Beef Bourguignon

3-lb. chuck roast,cubed
2 Tbsp. oil
2 10 3/4-oz. cans golden cream of mushroom soup
1 envelope dry onion soup mix
1 cup cooking sherry

1) Brown meat in oil in skellet. Drain. Place in slow cooker. Add remaining ingredients an cover.

2) Refrigerate 6-8 hours, or up to 14 hours, to marinate.

3) remove from refrigerator, cover, and cook on Low 8-10 hours.

4) Serve over cooked egg noodles or rice


When I used to make this recipe. I'd double or triple it. now that I'll cooking just for me, I don't really make it any more.

Hi! I'm still trying to figure out how to work the discussion board/forum stuff on my computer, so forgive me if this is the wrong place for a posting.

A slow cooker recipe I tried out over the weekend turned out quite good, easy, and cheap!

5-6 Chx breasts
1 med jar medium/hot salsa
1 8oz block neufschatel cheese (1/3 less fat than cream cheese)
1 small can green chilis

Dump all in slow cooker and either cook on low for the whole day or high for 2-3 hrs, low for another 3 hrs, then warm to serve.

Hi Lady Flannel--Can we have a "freezer-friendly recipes" thread in here? I'm a single mom and want some good recipes for batch cooking, etc, and recipes that freeze well so I don't have to eat the left overs for a week/am not tempted to eat more than I need too. :)

I saw some discussion (I think) about a entire team for this? But, it seems to me that a separate thread would do the trick.

Ingredients:
1 1/2 pounds lean ground beef
1/4 pound favorite ground sausage
1 egg
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon dry mustard
1 tablespoon soy sauce
1 clove garlic, minced
2 teaspoons salt
1 teaspoon pepper
.
Sauce:
2 cans Cream of Mushroom soup
1 cup sour cream
1 teaspoon Worcestershire sauce
1 dash Tabasco sauce
1/4 cup milk
Preparation:
Mix all ingredients together for the meat mixture. Shape into small meatballs and place on baking sheet or jelly roll pan. Make sure you use a pan with sides. Bake at 375° 45 to 60 minutes, or until browned. In a medium bowl mix sauce ingredients together. Place meatballs and sauce in a crockpot. Cook on HIGH for 30 to 45 minutes, until meatballs are cooked through. May be used as main dish served over rice or noodles or as an appetizer served with toothpicks.

Hey Here is a recipe I found at www.dwlz.com that I have been dying to make.If anyone makes it let me know how it turns out!I'm hoping to try it this coming week.It's a weight watchers recipe so it only has the points(4)I haven't figured out the calories yet.I can't imagine it being too bad tho.

Chicken Stroganoff

1 pound of frozen boneless skinless chicken breasts
1 can fat free cream of mushroom soup
16 oz carton fat free sour cream
1 envelope dry onion soup mix

Put frozen chickn in bottom of crockpot.Mix soup, sour cream, onion soup mix and pour over chicken.Cook on low for 7 hours.Makes 6 servings.(serve it over Rice or noodles, but be sure to add those points/calories)

I thought of tweaking it a little and putting some fresh onions and mushrooms in it as well.

Crockpot "Rotisserie" Chicken

1 3-31/2# Whole Chicken
1t garlic powder
1/2t black pepper
1 lemon

Make 4 or 5 balls of aluminum foil about the size of ping pong balls and place them in the bottom of the crockpot.

Place bird on cutting board and remove skin. This takes a little practice but the wings are usually the only thing that won't.

Cut lemon in half and pierce the flesh of the lemon with a fork. Squeezing gently rub the bird with the lemon. Place the lemon pieces in the cavity of the bird Sprinkle the garlic powder and pepper on the chicken.

Place the chicken in the crockpot and cook for 6-8 hours on low.

4 servings 135 Calories per serving.
